Tender Lemon Garlic Butter Chicken, Crockpot and THM S Recipe

Chicken is a weeknight staple. But it can get boring. This recipe creates incredibly flavorful, melt-in-your mouth chicken with minimal effort. This recipe is so easy but the results are anything but boring. You get juicy, tangy, and delicious meal the whole family will love.

This crockpot recipe is so easy!!

It’s perfect for busy nights. With minimal effort you end up with tender chicken in a luscious lemon garlic butter sauce. It’s another dump and go recipe. These kind of recipes are on repeat in my house.

What to serve it with

I made my mashed veggies.  If you make those, make sure you really push the liquid out. If not, they will be too runny. Cauliflower rice with some of the cooking liquid from the crockpot, garlic and onions would be good. Asparagus, salad, Brussels sprouts, green beans would all be great options.

Lemon Garlic Butter Chicken

Equipment

  • Crockpot

Ingredients

  • 1 1/2-2 Lb Chicken Breasts or Thighs
  • 1/3 C Chicken Broth
  • 1/2 M-L Lemon, zested
  • 1 M-L Lemon Juiced
  • 2 T Minced Garlic
  • 1 t Salt
  • 1/2 t Pepper
  • 1 1/2 t Onion Powder
  • 1 1/2 t Garlic Powder
  • 3/4 t Smoked Paprika
  • 1 t Italian Seasoning
  • 4 T Butter, cut into pieces

Instructions

  • Place chicken in the bottom of the crockpot. Mix together chicken broth, lemon zest, lemon juice, and garlic. Pour on top of the chicken. Mix seasonings together and sprinkle on top. Place chunked butter on top.
  • Cook on low for 5-6 hours or high 3-4. Squeeze extra lemon juice on top if desired.
  • Serve as desired.
