The Best Low Carb Pork Chops!

These low carb, trim healthy mama s pork chops are amazing!

One of my local grocery stores has buy one get one for a penny every couple of weeks. Pork chops are often include during these sales. Finding new ways to serve them that my family loves can be a little tricky. These pork chops were devoured and we didn’t have any leftovers! If you are looking for a family approved pork chop recipe, add this one to your next menu.

These pork chops aren’t just delicious, they are easy.

Almost all of my recipes are special ingredient free and easy. My goal is to help busy families eat healthy and not spend too much time in the kitchen making healthy meals. These pork chops are definitely worthy of being served to company. So many people think eating healthy is boring and bland. Make these and show them they are wrong!

You don’t have to use pork loin chops, use the “breading” on any pork chop.

If you don’t have these pork chops, use whatever you have. I am thinking this would also be a great coating for chicken. Chicken breasts, thighs, or legs. It is that good! What to serve the pork chops with? Here I used a mixture of cauliflower rice, mushrooms, and green beans. I did my “trick” of cooking the cauliflower rice with extra liquid until it was soft and no cauliflower taste. My family will eat it when I do that trick.

Low Carb Pork Chops

Ingredients

  • 6 Boneless pork chops I had 2 packages of 3, about 1 lb per package
  • 3 Eggs, beaten
  • 2 1/2 C Crushed pork rinds, I crushed them in a baggie with a jar
  • 3/4 C Parmesan Cheese If you have nutritional yeast, use half parmesan cheese and half nutritional yeast
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 1/2 t Dried Parsley

Instructions

  • Preheat oven to 400 degrees. Line baking sheets with parchment paper, if desired.
  • In a flat dish mix the dry ingredients.
  • Add your beaten eggs to a small dish. Get everything ready for assembly.
  • Dip each pork chop in the eggs on both sides.
  • Then dip each side in the pork rind mixture.
  • Place on the prepared baking sheet. When all pork chops are prepared, place in the oven.
  • Depending on the thickness of your pork chops, your baking time might vary. I baked mine for about 25 minutes. You want them to reach at least 150 degrees.
  • Allow to rest for about 5 minutes and then serve.
