Trim Healthy Mama Protein Breakfast Cookie
This “cookie” is so easy to make. I have seen various different ways people are making this high protein cookie. I wanted to make it trim healthy mama friendly. It couldn’t be easier. Honestly, the hardest part of this “recipe” is waiting for it to firm up. You don’t bake this, you freeze it.
There are so many possibilities with this recipe.
I plan on using blueberry yogurt tomorrow with a few diced blueberries. Today I used strawberry Chobani zero sugar yogurt. I also used vanilla protein powder. If you don’t like the taste of your protein powder, you probably won’t like the cookie. You don’t really do much to mask the flavor.
If you hate rice cakes, this recipe is not for you.
Since there are 3 main ingredients, you can’t hide the flavors. Also, make sure you break up the rice cakes really well. You don’t want big chunks. I am also thinking of different flavor combos. Coconut, chocolate, almond, caramel, etc. If you try any different flavors, I would love to hear what you make.
Trim Healthy Mama Protein Breakfast Cookie
Ingredients
- 2 Rice Cakes, crumbled
- 1 Single Serve Container Yogurt Flavored as desired
- 1 Scoop Protein Powder My protein powder is 2 scoops per serving, so I used 1/2 of a serving
Toppings as desired: Diced fruit, chopped nuts, drizzle of nut butter, sprinkles, chocolate chips, etc.
Instructions
- Crush the rice cakes.
- Dump the container of yogurt in a bowl with the protein powder. Pictured is strawberry yogurt and vanilla protein powder.
- Stir until combined.
- Add any add-ins, if desired. I stirred in 2 chopped strawberries.
- Dump in the rice cakes. Stir. I placed a piece of parchment paper on a plate. I scooped out the mixture onto the plate.
- Flatten out. And then place in the freezer, about an hour or longer. I will try and make 2 cookies from the mix next time. The cookie didn't thaw all the way, but was getting soft before I finished.
