This recipe came out of one of those “use what’s in the house” days. We had just returned from a weekend family trip, and I was going to be gone again the next day. I needed a crockpot recipe without making another trip to the store. This simple taco soup was the result.
Why this creamy taco soup works
Browning the ground turkey or other lean ground meat first gives it a better texture before it goes into the crockpot. Mixing the seasonings and 1 cup of water directly into the browned meat also helps distribute the taco flavor throughout the soup.
Hominy brings a hearty, chewy texture that holds up during the long cooking time. Great Northern beans and chili-style beans add substance, while the diced tomatoes and tomato sauce create the tomato base. The cream cheese is added near the end so it can melt into the finished soup and make the broth creamy.

Adjust the amount of broth

Ingredients
- 2 lb Ground Turkey or lean ground meat
- 1 Can of drained and rinsed Hominy
- 1 Can of drained and rinsed Great Northern Beans
- 1 Can Chili Style Beans
- 1 can of Diced Tomatoes
- 1 Can of Tomato Sauce
- 1 t Salt
- 1/2 t Ground Black Pepper
- 1 t Onion Powder
- 1 t Garlic Powder
- 1 t Chili Powder
- 1 t Ground Cumin
- 1 T Dried Minced Onion
- 1 Package 1/3 Less Fat Cream Cheese softened
- Toppings:
- Cilantro
- Green Onions
- Salsa
- Diced Tomatoes
Instructions
- Brown ground meat over medium to medium high heat. Add seasonings and 1 cup of water. When everything is mixed well add to crockpot base.
- Add all ingredients except cream cheese and toppings. Add 4-6 cups of broth or water. I know some people like a soup that has more broth. Cook on low for 6-7 hours. Add cream cheese that has been cut into chunks. Stir every 10-15 minutes. If the cream cheese is room temperature it should be finished in an hour.
- When cream cheese has melted serve in bowls. Top with desired toppings.

Use 1/3 less fat cream cheese, I think it is spelled neufatchel. This makes a lot so you aren’t getting a full 5 grams of fat in your bowl. I hope this helps.
