Crockpot Pork Roast with Onion Garlic Cream Sauce

You know I like saving money.

Well, I was at Costco and their pork loins were on sale. I love to buy them and cut them up for many different meals. Here is how I typically do that. This time I made the roast a little bigger so we could have leftovers. This was easy and delicious. Those are my 2 biggest goals with these trim healthy mama recipes, I want them to be easy and delicious. I have a few that might be a bit more hands on, but most of these recipes are really easy. So many of us have busy lives and living in the kitchen isn’t on my to do list!

This recipe is special ingredient free.

I do use xanthan gum to thicken the sauce. You can have a thinner sauce if you don’t have it, but it is available at most grocery stores today. I can find it at my local WalMart. I was afraid of it at first because of my experience with glucomannan. It makes things a little slimy, in my opinion. I like to use xanthan gum and don’t have the slimy issue.

If you are wanting to keep this a trim healthy mama s meal, some side ideas are salad, Brussels sprouts, asparagus, mashed cauliflower, green beans, roasted veggies, and sautéed broccoli. I made this into a xoer. I made mashed potatoes. I took some of the small on plan potatoes and boiled them with a bag of frozen cauliflower. I mashed together and added a little butter, 1/3 less fat cream cheese, and almond milk. None of the teens could tell anything was different (except for the peels, I didn’t peel off the thin skin of the potatoes). There were no mashed potato leftovers, even my kid who hates cauliflower loved it. This recipe is really good. I hope you make it soon.

Crockpot Pork Roast with Onion Garlic Sauce

Equipment

  • Crockpot

Ingredients

  • 2-3 lb Pork Roast
  • 1 Med Onion, diced
  • 1 T Minced Garlic
  • 1 t Sat;
  • 1/2 t Ground Black Pepper
  • 1 1/2 t Smoked Paprika
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 T Olive oil
  • 3/4 C Broth, dry white wine, or Water
  • 1/4-1/2 C Heavy Cream
  • 1/2-1 t Xanthan Gum

Instructions

  • Mix the seasonings together and coat the pork roast.
  • Place a medium to large skillet over medium heat. Add your oil. Carefully place your roast on the skillet.
  • Brown the roast on all sides. Carefully remove the roast and place into your crockpot.
  • Add your diced onion into the hot skillet and cook for about 3-4 minutes. Add the minced garlic and cook for another 2 minutes.
  • Add the broth and cook for about a minute.
  • Pour the onion-broth mixture over the roast. Cook for 6-8 hours on low or 4 on high.
  • When the time us up, remove the roast from the crockpot.
  • Add the desired amount of heavy cream to the crockpot.
  • Whisk in the xanthan gum. Don't add too much, it will take a couple minutes to thicken.
  • After the roast has rested for a few minutes, slice.
  • Serve with the sauce on top.
