Equipment

  • Crockpot

Ingredients

  • 3-4 Lb Pork Loin
  • 1/2 t Salt
  • 1/2 t Pepper
  • 1 t Smoked Paprika
  • 1/2 t Garlic Powder
  • 1/4 C Sugar free BBQ sauce, you might need a little more
  • 5-8 Pieces of Bacon It depends on wide/thick your bacon is

Instructions

  • Mix seasonings and sprinkle on top and the sides of the pork roast.
  • Brush or spoon most of the bbq sauce on top and sides of the roast.
  • Carefully layer the bacon over the bbq sauce. You want them to just barely overlap.
  • Carefully place bacon wrapped pork roast in your crockpot. Cook on low 4-7 hours. Internal temp should be 145 degrees. Note: I have a Ninja Foodie, like the IP it has a slow cook option.
  • When almost finished cooking brush, or spoon a little more of the sugar free bbq sauce on top. You can cook for a little longer in your slow cooker or for a completely optional step, broil for about 2-5. This will crisp up the bacon a little and brown the top more You can carefully place your roast on a baking sheet and place in your oven, just watch it carefully so it doesn't burn.
  • Allow the roast to rest for a few minutes.
  • Carefully slice and serve warm.
