Amazing Low Carb Macaroni and Cheese

This low carb macaroni and cheese is absolutely amazing!

Every holiday my hubby is in charge of making the macaroni and cheese. One year he found a recipe by Alton Brown and our holidays changed forever. It is such an easy recipe. You know, I am all about easy around here. While the water is coming to a boil, prep the ingredients for the recipe and it comes together in minutes.

This is a yummy and cheesy macaroni and cheese.

I am not the kind of person that likes baked macaroni and cheese or even the kinds with a topping. It doesn’t add to the recipe. The topping makes it weird, in my opinion. Just creamy and cheesy goodness is what I like. For the noodles, I did use dreamfileds noodles. I know not everyone is okay with dreamfields. Use the noodles or even veggies that you like to replace pasta with.

We have lots of low carb pasta options available to us now.

It seems like we have a lot of options today for pasta compared to just a few years ago. If you use something that has water in it, you might want to remove some of it, so your final dish isn’t too liquidy. A really good option is frozen cauliflower. Cook in the microwave, remove the excess liquid and use in place of the dreamfields pasta. Make this for your next holiday and you won’t be disappointed.

Low Carb Macaroni and Cheese

Servings 4

Ingredients

  • 8 oz Elbow Macaroni or another low carb option
  • 3 T Butter
  • 2 Eggs
  • 3/4 C Heavy Cream
  • 1 t Hot Sauce
  • 1 t Salt
  • 1/2 t Black Pepper
  • 3/4 t Dry Mustard
  • 10 oz Sharp Cheddar Cheese, shredded

Instructions

  • Boil a medium pot of water. Add a few pinches of salt.
  • While water is coming to a boil, in a mixing bowl, beat together eggs, hot sauce, and heavy cream. In a small bowl, mix together dry ingredients. Add to the egg mixture and mix again.
  • Once water has come to a boil, cook pasta until done to your liking. I prefer al dente. Drain.
  • Add the butter to the pasta.
  • Pour in the egg mixture and make sure the noodles coated.
  • Slowly add the cheese.
  • Serve warm.
