Budget Friendly Burrito Bowl Meal Prep- Low Carb and Trim Healthy Mama FP, E, or S
This burrito bowl recipe is great for meal prep. It is low carb and can be any fuel in trim healthy mama.
When budgets are tight, it pays to look through your freezer and pantry and see what you can find. I pulled out a few ingredients and came up with this recipe. If you don’t need as much food, cut it in half. We have been eating this burrito bowl for days. I might even have enough to freeze! I follow the trim healthy mama eating plan and I made this as a fuel pull. I used low fat meat and even did a rinse and didn’t add any fat to the bowl ingredients.
This burrito bowl recipe is so versatile!
Above is how we ate it the first night. I put a lettuce base on the bottom. Added some of my homemade ranch style beans with the burrito bowl mixture. Added my fp nacho cheese sauce, some baked tortilla chips, salsa, and small dollop of sour cream. Hubby and boys went back for seconds. You can use this in quesadillas, tacos, casseroles, and more. I actually made chili with the beans and burrito bowl last night!!
This is the chili I made. So simple, fast, and delicious.
I can’t believe how versatile this burrito bowl has been. Burrito bowl, chili, tostadas and more. If you aren’t making your own ranch style beans, you can add some canned beans of choice. I will most likely end up freezing some of the beans. This has been such a frugal recipe and frugal week. The burrito bowl only cost me $12 to make. The meat and frozen veggies were on sale but you can make this for around $20 if you pay full price for everything.
This morning I used the burrito bowl to make breakfast tostadas.
I baked 6 25 calorie corn tortillas in my oven until crispy. I put about 1 cup of the ranch style beans in a skillet and mashed them. You could easily just use canned refried beans. Then I added about 1 cup of the burrito bowl mixture and heated it through. I added about 1/2 cup of carton egg whites. I topped each tostada with 1/3 of a triangle of light laughing cow cheese, lettuce, the meat mixture, the fp nacho sauce, and tomatoes. So delicious! Hubby loved them too.
