Chipotle Chicken Breasts Trim Healthy Mama any Fuel
These chipotle chicken breasts are your perfect busy day dinner recipe. It is honestly just dump and go. I dumped all of the ingredients into a freezer baggie and froze it. I then thawed it and cooked them in my instant pot. I was out all day, from 2 in the morning until 5:30. I threw these into the instant pot for 6 minutes and allowed the steam to vent naturally. I had planned on making these into an E by using cooked brown rice, beans, salsa, cilantro, and a low fat suace. I made these into low carb, trim healthy mama chicken bowls. I used chopped romaine, small amount of beans, avocado, cilantro, cheese, and a chipotle sauce. I used some of the cooked sauce in the ranch sauce I topped my bowl with. This was a huge family hit. Some of my crew ate it like a salad and others had tacos. I shredded the meat in my kitchen aid mixer and it makes quick work of that job.
This is so versatile and crazy easy. You can make a few meals like these ahead of time and freeze the baggies. You will always have something yummy at home to cook. No need for drive-thrus or cheat meals. You can cook this from frozen in your instant pot as well as in your crockpot. From frozen in your instant pot*, depending on the thickness of your chicken breasts, between 12-16 minutes. Thawed 6-7 minutes, both with natural release for 10 minutes. If you put your frozen chipotle chicken breasts in the crockpot base in the morning on low, stir once or twice and cook all day, at least 6 hours. Thawed, the chicken breasts should be done in about 3 hours. All of these times will be based on the thickness of your breasts.

I made a recipe years ago using chipotle peppers in adobe sauce and it was so delicious. I have been looking for more recipes using these amazing peppers. Here is a link to the chipotle sauce/dressing I made. This sauce is absolutely amazing and made this meal over the top!! If you make these, make this sauce. If you need it to be a trim healthy mama fuel pull, use just non-fat Greek yogurt instead of adding the mayo. You can add a tsp of mct oil if you would like. You can serve this over burrito bowls. They will taste amazing!!
*Make sure you follow your instant pot or other pressure cookers instructions on the amount of liquid required for your food. Some require 1 cup of liquid, others vary.
Trim Healthy Mama FP, S or E Chipotle Chicken Breasts
Ingredients
- 2 lb Boneless, Skinless Chicken Breasts
- 2-4 Chipotle Peppers with some of the sauce
- 1/2 T Smoked Paprika
- 1 Med Onion, diced
- 2 t Minced Garlic
- 1 T Oil
- 1/2 t Garlic Powder
- 1/2 t Onion Powder
- 1/2 t Chili Powder
- 1/2 t Ground Cumin
- 1 t Salt
- 1/2 t Black Pepper
Serve these chipotle chicken breasts with rice and beans for an E meal, serve with lettuce, cheese, sour cream, avocado for an s meal. Make these into tacos. Whatever your heart desires.
- Lime Juice to top your bowls or tacos the day you eat these.
Instructions
- Put all of your ingredients, except your chicken breasts, into a baggie or bowl. Mix together. I break the chipotle pepper open. Add the chicken breasts and mix together. If making this the day you prepped it, allow it to marinate for a little while.
- When ready to eat, cook according to the times I listed above. Cook from frozen or thawed.
- Serve this as whatever fuel you want/need. These are so flavorful and end up being pretty versatile.
