Creamy Kielbasa and Cabbage Skillet- Trim Healthy Mama S, Low Carb
This creamy kielbasa and cabbage skillet is low carb, trim healthy mama s and it is so easy to make!
Having a large number of skillet meals comes in handy throughout the year, but I like them even more in the summer. This recipe is so easy and pretty budget friendly as well. It was also a huge hit. Everyone loved it! Hubby had seconds. I have made something similar to this recipe, but the Boursin cheese really added an extra level to it. I was told you can make it at home to help save money. I might try that soon.
I used bagged tri-color coleslaw mix for cabbage.
To save time I used a bag of coleslaw mix. It is cheap and convenient. To make this go farther, feel free to use 2 bags. Cabbage really cooks down, and this recipe could easily handle another bag. Check the seasonings at the end, it might need a little more. My bell pepper was pretty big, so I only used half. I also don’t really care for bell peppers. If your family really likes them, add the whole pepper.
One last thing.
This recipe is great for any budget. I used kielbasa that I had in the freezer. Use whatever you have. Ekrich type sausage would be fine used here. I don’t know how an Italian sausage would taste here but probably not too bad. I have a few kielbasa recipes on my site because Costco kept having it on sale. I bought a few packs and love trying it in different recipes. This recipe is definitely a family favorite.
Creamy Kielbasa and Cabbage Skillet
Ingredients
- 1 Package Kielbasa, sliced into rounds
- 1 M Onion, diced
- 1 M Bell Pepper, diced
- 1/2 T Minced Garlic
- 16 oz Package of Coleslaw Mix, use 2 if you want to stretch the recipe
- Boursin Cheese
- 1/2 t Salt and pepper
- 1 t Garlic Herb seasoning (use whatever you have, any seasoning like this will work)
- Olive Oil as needed for cooking
Instructions
- In a large skillet over medium heat, add some olive oil. Add the onion and bell pepper. Cook until cooked to your liking. I wanted mine almost completely cooked.
- Add garlic and seasonings.
- Add your coleslaw and cook for a few minutes. If you have any large pieces of cabbage, cut them into smaller pieces.
- Add your kielbasa to the skillet and cook for a few minutes. Add the boursin cheese.
- Stir until melted through.
- We served ours on top of mashed veggies.
Very delicious! I couldn’t find the Boursin cheese so I used laughing cow. Ate it with a piece of low carb bread with butter and garlic salt

Search mashed potatoes on here. Use the one with the yellow squash in it. And only use 2 small potatoes per person.
