Ingredients

  • 1 Lb Lean Ground Beef
  • 1 M-L Onion, diced
  • 1` M-L Bell Pepper, diced
  • 1-2 T Minced Garlic
  • `1 Pckt Taco Seasoning

Instructions

  • In a large skillet over medium heat cook ground beef. Add onions and bell pepper. Once cooked add minced garlic.
  • Add cauliflower rice to skillet. If you want, cook it in the microwave first. That's what I do. Cook until you like the texture of the rice. You might need to add water or broth if it starts sticking.
  • Add the beans and rotel. Add the seasonings and salt and pepper to taste.
  • Cook for a few minutes. Make sure it doesn't start sticking. Make the cheese sauce. In a blender add the cottage cheese, laughing cow cheese, and nutritional yeast. Blend. If it's too thick, add a little milk or water.
  • Turn the heat off. Pour the sauce in the skillet.
  • Stir. If you like the taste and texture, sprinkle with some reduced fat cheese.
  • Serve as desired. Here's hubby's bowl.
