This Low Carb Crockpot Greek Chicken is Amazing!

My goal with this blog is trying to come up with easy recipes that are family approved. This low carb, trim healthy mama s crockpot Greek chicken was another hit with everyone!! First, let’s talk about EASY! Easy doesn’t mean bland or boring. This was so easy, I prepped this as part of my weekly meal prep. I literally pulled the frozen meat out of the freezer and placed it in the tote.

You can easily prep this crockpot Greek chicken in 5 minutes or less.

There aren’t a lot of ingredients needed to make this Greek chicken recipe and if you use my tote method for prepping, it can be prepped in no time. That makes this the perfect dinner for busy days. Whether it’s a busy school night, sports weekend, or even a lazy Sunday, this is a dinner that would be perfect for all of those days.

For this Greek chicken, you can use chicken breasts or chicken thighs.

I used thighs because that is what I had. I also like how it turned out with the thighs. There is also an optional step of browning your meat. If you are using chicken thighs, you don’t need to worry about the size, but if you are using chickens breasts, you might want to cut them in half to make sure the chicken is cooked through in time.

Low Carb Crockpot Greek Chicken

Ingredients

  • 2 Lb Chicken thighs or breasts
  • 12 oz Jar of Roasted Peppers
  • 1 C Black olives, left whole or chopped in half
  • 1 Med Red onion, cut into "chunks:"
  • 3 T Red Wine Vinegar
  • 1 T Minced Garlic
  • 1 t Dried Oregano
  • 1 t Salt
  • 1/2 t Pepper
  • 1/2 C Crumbled Feta Cheese
  • Dried or Fresh Parsley for topping

Instructions

  • If desired, brown your chicken in a large skillet in a little olive oil
  • Place chicken in the bottom of the crockpot. Top with roasted peppers, black olives and onion.
  • Mix together the red wine vinegar, minced garlic, oregano, salt, and pepper. Pour on top of the items in the crockpot. ,
  • Cook on low for 3-5 hours or high for 2-3 hours.
  • Serve warm with feta and parsley on top.
