If you like Mexican food, this taco Tuesday in a skillet is a must make!

As written this recipe is low carb, trim healthy mama s. My family absolutely loved it! I love coming up with new ways to enjoy Taco Tuesday. This was a fun new way to enjoy this tradition. I also hid a bag of cauliflower rice in the recipe. You don’t have to include it, but I recommend it if you need to get more veggies in you or your family’s diet and it also extends the meat as well.

I had planned on making my own tortilla chips for topping, but I ran out of time.

We were able to split one bag four ways. They aren’t cheap and I wanted it to stretch if possible. These are the closest to a regular chip I have found. Not quite a Dorito, but a great low carb, thm s option. The chips on top aren’t necessary anyway. If you don’t want to buy them or make your own, just leave them off.

A couple tips

If you want to include the cauliflower rice, my biggest tip is to add plenty of liquid. I probably used 1 cup of beef broth. I cook the rice until you can’t tell it’s there. My family isn’t really a fan of cauliflower rice. This trick really hides it and my family will eat it. If you are going to use a fatty beef, I would wait until you drain it before adding it to the skillet. My beef wasn’t fatty but I don’t know how the cauli rice will taste with all of the fast being absorbed. Finally, use your favorite toppings. All of our bowls were different but yummy!

Ingredients

  • 1 Lb Ground Beef
  • 1 M Onion, diced
  • 1 M Green Bell Pepper, diced
  • 1 T Minced Garlic
  • Oil for cooking veggies
  • 1 Pckt Taco Seasoning, I made my own
  • 1 t Salt
  • 1/2 t Pepper
  • 10-12 oz Frozen Cauliflower Rice, cooked
  • 12.4 oz Rotel
  • 14 oz Canned Beans, optional

Desried Toppings

Instructions

  • In a large skillet over medium heat, add about 1 to 2 tablespoons of oil. Add your onion and bell pepper.
  • After a few minutes, add your garlic.
  • Add your hamburger meat and start to brown.
  • Add your Rotel, taco seasoning,salt, pepper, and cooked cauli rice.
  • Start cooking and adding liquid as needed. I use water or broth.
  • When everything is cooked through, add your beans. Stir and taste.
  • Serve however desried. We served ours over a base of lettuce. And different toppings.

    This recipe was so good! You can’t even taste the cauliflower in it… trust me! I am good and sniffing out sneaky cauliflower, and I couldn’t taste it at all! So delicious!
