THM Fuel Pull or Deep S Chocolate Pudding

Ingredients

  • 1 cup egg whites
    Deep S option: Substitute 3 whole eggs + ¼ cup egg whites

  • 1 teaspoon MCT oil (optional)
    Adds a metabolism boost while staying FP or Deep S

  • 3 tablespoons Gentle Sweet (xylitol-free recommended) or 1/3 Cup of other sweetener

  • ½ teaspoon extract (vanilla, maple, or chocolate)

  • ¼ cup cocoa powder

  • Pinch of salt

  • ½ cup unsweetened almond milk
    (Use slightly less for the egg-white-only version)


Instructions

  1. Gently soft-scramble the egg whites in a skillet over low heat until just set.

    • You may also cook them in the microwave (about 2 minutes, stirring at 1 minute).

    • Do not overcook. Overcooked eggs can cause an eggy taste and gritty texture.

  2. Add the cooked eggs and all remaining ingredients to a blender.

  3. Blend until completely smooth, scraping down the sides as needed.

  4. Chill for 30 minutes to thicken.

  5. If your pudding doesn’t set, blend in ½ teaspoon gluccie or xanthan gum, then chill again.

Pro Tips for the Best Texture (Important!)

If you’ve ever ended up with grainy pudding, here’s what makes the biggest difference:

  • Cocoa powder matters. A high-quality cocoa (like Rodelle) creates a smoother pudding.

  • Sweetener choice matters. Xylitol-free Gentle Sweet gives the creamiest results. But if you don’t have gw, you can use any sweetener you have

  • Do not overcook the eggs. They should be just barely set, not browned.

These three things alone can make or break this recipe.


Protein Variations & Modifications

  • With Whey Protein:
    You can add whey protein for flavor, but blend it in at the very end to avoid fluffiness.
    Note: Texture may be slightly thinner.

  • Deep S Version:
    Use whole eggs instead of egg whites for higher fat and satiety.

  • Extra Thick Pudding:
    Add a pinch more gluccie or xanthan gum and chill longer.

Equipment

  • 1 Fry Pan/Skillet or a microwavable steamer

Ingredients

  • 1 C Egg whites Substitute 3 whole eggs and 1/4c egg whites for Deep S
  • 1 t MCT Oil, optional Add to the blender for an extra awesome Metabolism Boost! Don't worry, you will still be in FP or Deep S !
  • 3 T Gentle Sweet Xylitol Free for best results. If using other sweeteners, start with about 1/3 cup and go from there
  • 1/2 t Vanilla, maple, or chocolate extract
  • 1/4 C Cocoa Powder
  • 1 Pinch Salt
  • 1/2 C Unsweetened Almond milk, use a little less if making the egg white only version

Instructions

  • Gently Soft Scramble your eggs in a fry pan, you can also cook them in the microwave in a microwave safe bowl or steamer (about 2 minutes, stop at 1 minute to stir), or you could even use the "cook" setting on your blender to cook the egg while you are blending. DO NOT OVERCOOK YOUR EGGS. This will make an eggy flavor and a bad texture. Be very careful about how long you cook. They should be just set, not browning at all.
  • Add all ingredients into the blender and blend until smooth! Scrape down and blend again.
  • Chill for 30 minutes
  • If your pudding isn't setting up, you can add 1/2 tsp of gluccie or xanthan gum.

Notes

Some people have been reporting a grainy-ness or a pudding that doesn't set up. I am not a professional recipe writer lol!!!  What I have determined may be the cause is the cocoa powder and sweetener. I use the Rodelle brand cocoa powder (I get it from Costco- if you have a business center it's in stock year round!) and I used Xylitol free Gentle sweet for the pictured recipe.  I do think that is the key to thick, creamy , gritless pudding! 
 
Also, make sure you aren't over cooking your eggs. Scramble (cook) them to just set in the pan. You don't want to over cook as that may change the texture!
 
-I made this recipe using whey protein as a flavor substitution.  Be aware, it will still taste good, but may not get as thick as the original recipe. Also, blend everything except the protein powder, add that at the very end after you have everything all creamed together, otherwise it will get fluffy!

    Could I substitute the 1/4 cup Cocoa powder with THM-optimized chocolate protein or maybe half cocoa and half protein powder?

    I just made my 2nd batch in 2 days, only this time I was wise enough to double the batch! I added a splash of maple extract this time, but next time I will try orange extract. This would be awesome as a filling for those Crepini I found at Costco last week! Topped with some Berry WOW sauce or fresh raspberries and a squirt of some whooping cream … a dessert I would serve company!
