Gluten Free Meatballs

These meatballs are not only gluten free, they are low carb, keto and trim healthy mama compliant. I haven’t had meatballs in years. Back in the day when I was big into once a month cooking, I made a batch of meatballs pretty much every time I prepped. Eating this way doesn’t mean that I have to give up food that I used to love.

Depending on which eating plan you follow, serve these on top of your favorite spaghetti replacement. I served these on top of dreamfields pasta last time. I also enjoy these with spaghetti squash. I like zoodles, but they aren’t my favorite. If you want to take this to the next level, make a low carb bread to serve with them. Yum!!

Low Carb Meatballs


  • 1 1/2 lb Ground Beef
  • 3/4 C Parmesan Cheese
  • 1 1/2 T Dried Minced Onion
  • 1 1/2 T Minced Garlic
  • 2 Eggs
  • 1 T Italian Seasoning
  • 1 t Fennel Seeds
  • 1 t Salt
  • 1/2 t Black Pepper


  • Put everything in a bowl and mix together. Your hands are the best tool to do this. Mix until everything is combined.
  • Shape into balls and place on a parchment lined baking sheet. I used a cookie scoop and used my hands to do a final shaping.
  • Bake at 350 degrees for 20-25 minutes. It is going to depend on how big you made them for the cooking time. Serve with your favorite spaghetti sauce.
