High Protein, Healthy Rotel Cheese Dip!
Craving a creamy, cheesy dip, but wanting less calories? This game-changing cottage cheese dip is your answer. This dip is packed with protein from the cottage cheese and ground beef, lots of delicious flavors, but without the guilt. Spice it up or down, make it how hot or mild you want it. I kept it fairly mild because of my daughter, but we added jalapenos to our individual bowls.

Game day, a party, 0r even meal prep!! Enjoying our favorite dips but with lower calories is huge for me. I love dips but the amount of calories and fat make me miss out, or just indulging a little. Now I can eat as much or little as I want, guilt-free. Serve with veggies, pork rinds, microwaved low carb tortilla chips, air fried corn tortillas, or however you want. This recipe is the perfect way to indulge in a delicious cheese dip without sacrificing your health goals.
Rotel is part of this dip: it’s just diced tomatoes and green chilies.
Rotel, or the generic version come in a variety of flavors and levels of heat. I would have used hot if it was just for me and my hubby. You could use salsa, just drain it well (we add liquid at the end to get the desired consistency we want.)
Bonus: This dip is so easy to make!! It’s definitely something you can make last minute. Make it and enjoy every guilt-free bite!
High Protein, Lower Calorie Rotel Dip
Ingredients
- 1/2 lb Lean Ground Meat Can use breakfast sausage
- 1/2 M-L Onion, I used red
- 1/2 Can Rotel
- 1/4 C Nutritional Yeast Optional
- 1/2-1 Pckg Taco seasoning or diy
- 2 C Blended Cottage cheese
- 1 C Shredded Cheese, I used a 4 cheese blend
- Reserved rotel liquid to create the desired consistency
Optional: A can of diced jalapenos or green chilies, cayenne, more cheese if desired
Instructions
- Brown ground beef with the diced onion.
- Add 1/2 can of the rotel, mostly drained.
- Add nutritional yeast
- Add taco seasoning. I just create mine from single ingredients added to the skillet, that's why it doesn't look like packaged taco seasoning.
- Stir to mix well. Reduce heat to med-low and add cottage cheese.
- Add shredded cheese.
- Stir until melted. Add liquid slowly until desired consistency is reached. Taste and adjust seasoning. Depending on your taco seasoning used, you might need salt and pepper. Add more heat as desired. Serve as is if desired or add toppings. My family is so picky so we just add what we want to our own bowls.
