Easy and tasty High Protein Fried Pickle Dip
Here is an easy high protein pickle dip! It is low carb, trim healthy mama S as well. A few simple ingredients blended up and then a quick topping, that’s it. It is so good!! For some people the blended cottage cheese craze might be over, but it isn’t for me. I am still blending and using it in many recipes. It really helps me reach my protein goals.
This is a guilt free dip recipe!!
If you like fried pickles, but not the calories, give this dip a try. I rarely eat fried pickles and when I do I try to only have a few. Now I can have the flavor but not the guilt. If you aren’t watching your carbs or following trim healthy mama, you can panko bread crumbs in place of the pork rinds.
Great for a quick lunch or snack, or girl dinner.
This was perfect in my meal prep. I can take it with me if I need to as well. Getting ready for a party with appetizers, New Year’s Ever, the Superbowl, and more, this dip will fit right in. I served mine with pork rinds, grape tomatoes, and sliced cucumbers. But you serve it however fits best for you. If you make this, I would love to hear what you think.
Hight Protein Fried Pickle Dip
Ingredients
- 1 C Cottage Cheese
- 3 Wedges Light Laughing Cow Cheese Or cream cheese equivalent
- 1/4 C Sour Cream
- 3 T Pickle Juice
- Ranch dressing to taste
- Salt and pepper to taste
- 1/2 C Diced Dill Pickles
- 1/2 C Diced Gherkins
- 1 T Minced Garlic
- 1-2 T Butter
- 2/3 C Pork Rinds Crushed I used precrushed
- 1-2 T Minced Dried Onion I only had 1 tablespoon, I think 2 would have been better
- 3 T Parmesan Cheese
Instructions
- In a blender place cottage cheese, light laughing cow cheese, and sour cream, salt, pepper, minced garlic, pickle juice, and ranch seasoning. I started light because I didn't want to put too much in. I think about 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and 2 tablespoons of dry ranch seasoning. Blend thoroughly. Taste and adjust as needed.
- Scrape contents into a container and stir in pickles.
- Place butter in a skillet to melt, over medium heat.
- These are the pork rinds that I used.
- Pour pork rinds into the skillet.
- Cook for about 20 seconds, add the dried onion flakes and the Parmesan cheese.
- Cook for a least a minute, stirring the whole time.
- Dot the top of the dip with cooked mixture. Trying to be as even as possible and use a spatula to spread it out.
- Serve with desired dips.
