Low Carb and Amazing Salmon Patties
I grew up on salmon patties. We called them salmon croquetts. My step-mom made them for us and we loved them. We usually ate them with mac-n-cheese and ranch style beans. We topped ours with ketchup but my hubby tops his with mustard. That is so weird to me but he likes them that way.
Since I follow the trim healthy mama way of eating, these fall in the s category. If you eat keto or low carb, these will definitely work for you. Instead of crushed saltines, I used almond flour as my binding agent. I also added nutritional yeast and baobab powder. Those are optional but add great nutritional benefits.
Depending on how big you make the patties, you might have to cook them longer. I made them about the size of small burgers. I cooked mine on my electric griddle at 350 degrees. If you want to take the time to fry them in a skillet, do that. I grew up with mine pan fried and they are fantastic made that way.
Low Carb Salmon Patties
Ingredients
- 2 Cans of Salmon, drained
- 1 Med Onions, diced
- 2 Med Eggs
- 1/2 C Almond Flour
- 1 T Nutrional Yeast
- 1 T Baobab Powder
- 1/2 t Garlic Powder
- 1 t Salt
- 1/2 t Black Pepper
Instructions
- Mix all ingredients in a medium bowl.
- Form into patties and place in skillet or griddle. I spray my griddle with non-stick spray.
- Cook until brown on this side. and flip over and cook until cooked through. I cooked mine for about 5-7 minutes on each side.
- Serve hot with your choice of toppings and sides.
