I debated on whether I should share this recipe. It is so easy, uses basic ingredients, I felt like everyone might already have this recipe tucked away in a recipe tin. Hubby asked me what was for lunch last Saturday. I didn’t have a plan but knew I had a few cans of chicken, cream cheese, and buffalo sauce. Those are the base of this recipe. Canned chicken is a great staple to have for busy days with nothing thawed from the freezer.

I used medium buffalo sauce (I used the great value brand). Since I have someone in my house that doesn’t like heat. If your family loves heat, go bold. I also used dreamfields pasta. Use zoodles, spaghetti squash, or even the palm noodles. I used what I had on hand and that my family would like.

This recipe uses just a few ingredients. This is a perfect recipe to keep around for pantry meals. Having a stock of a week’s worth of eating. This last winter in Texas, having these ingredients in my pantry and fridge would have made a huge difference for me. I now keep basics, including canned chicken, so no matter what, we can eat. Don’t save this for recipe for emergencies though. It is so good and everyone loved it, even the one who can’t handle heat.
Low Carb, Buffalo Chicken Bake
Ingredients
- 2 C Low Carb Pasta Option Cooked
- 8 oz Cream Cheese, reduced fat is fine, softened
- 3/4 C Ranch Dressing
- 1/3 C Hot Sauce, more to top individual servings
- 2 C Shredded Cooked Chicken
- 2 C Shredded Cheese
- Green Onions for Topping
Instructions
- Preheat oven to 350 degrees.
- Mix ranch dressing, cream cheese, and hot sauce.
- Stir in 1 cup of shredded cheese and chicken.
- Stir in pasta of choice. Pour into a greased casserole dish. Top with remaining shredded cheese. You can top with green onions before or after baking, your preference. Bake for 20 minutes.
- Serve hit topped with more hot sauce and ranch dressing.
