Low Carb Cheesy Squash Skillet

This was one of those, I didn’t plan ahead dinners.

I rummaged through the fridge and found some ingredients and threw them together I was so happy with how this turned out. The whole family loved it!!! When we have yellow squash and zucchini coming out of our ears, this will be one of my go to easy summer recipes. You don’t need to heat up your house with the oven since everything is made right in the skillet. It comes together super fast and is perfect for the busy weeknight dinner.

I hid some mushrooms in the recipe as well.

When I came home after a busy day and searched my fridge, I saw a package of mushrooms and a package of yellow squash and zucchini from Costco. They needed to be used up. I grabbed a few more ingredients and dinner was made in a snap.

You could use cauliflower rice with the diced mushrooms to make this even more veggie filled.

I was out of cauliflower rice when I made this, otherwise it would have been included. Stay tuned for an updated version of this recipe. I know I can’t hide too much in my recipes or my boys find me out. My tip when hiding things like mushrooms and cauliflower rice is to make sure you cook them with your meat long enough to not be noticed and add plenty of seasoning. Start slowly and add more seasoning as you cook and taste. Add the amount of seasonings your family likes. My like ours pretty strongly flavored but I hold some back so we can add extras to our own plates since only a few of us can handle heat. Now, here’s the recipe.

Low Carb Squash and Hamburger Skillet

Ingredients

  • 1 Med Onion, diced
  • 8 oz Mushrooms, diced as small as you need them
  • 2 t Minced Garlic
  • 1 Lb Hamburger Meat
  • 1 Med Yellow Squash, diced
  • 1 Med Zucchini, diced
  • 1 t Salt
  • 1/2 t Black Pepper
  • 4 oz Cream Cheese
  • 2 t Worcestershire Sauce
  • 1 T Olive Oil

Instructions

  • In a medium to large skillet over medium heat, add your olive oil and diced onion.
  • Once your onions have cooked for a few minutes, add your mushrooms.
  • Cook until your mushrooms are cooked as much as you need them to be. I am hiding them from a mushroom hating son, so I cooked for at least 5 minutes. If your ski8llet starts to get too dry, add some water or more olive oil.
  • Remove your onion and mushroom mixture from the skillet and add your hamburger meat. Cook through.
  • Add the mushrooms back to the skillet. Add the seasonings, minced garlic, and Worcestershire sauce to the skillet.
  • Add the diced squashes and cook through.
  • When your squash is cooked through, add the cream cheese.
  • Stir until melted and top with cheese.
  • Serve with a salad or other side of choice.
