Low Carb Huevos Rancheros

Low carb heuvos rancheros, also a trim healthy mama s recipe, was absolutely amazing!!

This breakfast was filling, nutritious, and delicious. Ha, that sounds like a commercial. You don’t know about all of the recipes that I make that aren’t great, or maybe mediocre, or even complete flops. I thought this recipe was so good and easy, I am posting it the first day I made it. If you need to spice up your breakfast routine, keep reading.

This recipe uses only basic ingredients that are in most low carb or thm kitchens.

You can see the base peaking out on the right side. To keep this low carb, I used a low carb taco shell, mission to be exact. Crisp it in a toaster oven, air fryer, oven, or even a skillet. I crisped mine in an air fryer. You don’t want to burn it, but get it nice and crisp. It should stay crispy and not get soggy under the eggs and sauce.

This recipe comes together quickly and you can (and should) adjust with what you have and like.

I cooked the eggs in salsa and cream. If you have tomato sauce, rotel, canned tomatoes, even fresh chopped tomatoes. If you don’t want to use the heavy cream, you will need extra tomato product. You honestly don’t need much heavy cream, 1 to 2 tablespoons. If you have the rare perfectly ripe avocado, this is a great recipe to use it in. This recipe can easily be doubled or quadrupled. If you like Mexican food, this recipe needs to be on your menu.

Low Carb Huevos Rancheros

Ingredients

  • 2 Eggs
  • 1-2 T Diced onion
  • 1 T Olive Oil
  • 1 t Minced Garlic
  • 1/4-1/3 C Salsa, or other tomato product
  • 1-2 T Heavy Cream

Sprinkle or pinches of salt, pepper, smoked paprika, and cumin. And toppings of your choice.

Instructions

  • In a small skillet, over medium heat, add olive oil and diced onion. After cooking for a few minutes, add the garlic.
  • Stir and cook for a minute. Add the salsa., cream, and eggs. Place a lid on top and allow to cook while you prep your low carb tortilla. in an air fryer or method of choice.
  • Remove lid a few times and stir the edges. Be careful so you don't scramble the eggs. Sprinkle the seasonings on top. If you like your whites cooked, gently push the whites out. It took a little patience to get the yolks runny and the whites cooked almost all the way though.
  • Place your cooked low carb tortilla in a bowl. Carefully remove each egg to the bowl and remove all of the sauce around the bowl. Top with your desired toppings.
