Want a change of pace in your weekly meatloaf? Give this appetizer inspired recipe a try. No need to have jalapeno poppers as an appetizer, make it the main part of your meal. The jalapenos give just a little heat, as long as you remove the seeds and the white parts on the insides of the peppers. If your family likes more heat, leave the white parts in and some of the seeds. I have one that can’t handle much heat, so I use just the green parts when I make it.
Serve it with your family’s favorite sides. To keep this a THM, trim healthy mama S or low carb meal, I serve it with mashed cauliflower and
roasted green beans. Top with extra shredded cheese and diced jalapeno pieces if desired.
This is also a good make ahead recipe. Freeze the mixture in the pans and pop out and store frozen in a freezer baggie. Or you can store the mixture in a freezer bag. Either way you prep the meatloaf mixture, this makes for an easy dinner for a busy day.
Low Carb, THM S Jalapeno Popper Meatloaves
- 1 1/2 lb Hamburger meat try to get around 93/7
- 2-3 Jalapenos depending on how hot you like it Diced
- 2 Eggs cracked
- 1 Cup Shredded cheese cheddar or colby jack
- 4 oz Softened Cream Cheese
- 2.5 oz Real bacon bits
- 1/3 Cup Almond flour
- 1 t Salt
- 1/2 t Ground Pepper
Preheat oven to 400 degrees.
Mix all the ingredients together in a bowl.
Put meat mixture into muffin pans I used silicone.
Bake for 20-30 minutes, or until baked through.
Makes one dozen mini meatloaves.
