Low Carb Tostadas- Trim Healthy Mama S- Using Leftover Meat

These low carb, trim healthy mama s, tostadas use leftover meat and make dinner easy.

Do you ever have leftover taco meat, chicken fajitas, carne guisada, roast taco meat, or just any leftover meat you need to use up? This is one of my favorite ways to use up the meat. They can be made different for each person. The plate pictured isn’t for my hubby, since he doesn’t want lettuce or tomatoes on his. There are so many ways you can serve these low carb, thm s tostadas.

This is the basic starting point.

If you are really watching your carbs, you can leave the refried beans off. I only add a small smear on each one. If that is too much, just leave them off. I like to crisp them a little in the oven and then add some toppings, like pictured above and then place back in the oven. This makes sure the base is nice and hot and the cheese is melted.

I feel silly making this as a post, but sometimes we just need ideas.

The day that I thought about making these I didn’t know why I didn’t think about using low carb tostadas using low carb tortillas. They always work and everyone is happy when I make them. If you have leftover Spanish Rice, that would be a great side. Guacamole or pico de gallo would be great toppings. If you want xoers or want to keep it low-fat, if you have some leftover chicken taco meat,  make these corn tostadas instead. I have made these for my lunch several times. They are a trim healthy mama e. Use light laughing cow cheese as your cheese and it is so good!!

Ingredients

  • Leftover Meat
  • However Many Low Carb Tortillas Needed- it really depends on the size of the tortilla

Toppings: Small amount of refried beans, leftover meat, shredded cheese, sour cream, avocado, pico de gallo, gaucamole, lettuce, tomatoes, etc.

Instructions

  • Preheat oven to 350 degrees. Take your tortillas and spray with some nonstick cooking spray. Place on a baking sheet. When oven is preheated, bake for about 5-7 minutes. Smaller ones are cooked a bit faster. Take out of the oven and flip. Spread beans, if using, add meat and sprinkle on cheese.
  • When cheese has melted and the tortilla is crispy, take out of the oven.
  • Top with desired toppings.
