Trim Healthy Mama Crockpot Chicken Tacos

This is one of the recipes from my freezer cooking days that I did a few months ago. This is a dump in the bag and freeze recipe. then What makes this thm recipe even better, you can dump everything into your crockpot! How crazy easy is that?!? Of course you don’t have to freeze this recipe. Just dump everything straight into your crockpot and let it cook all day. It is so delicious! Reduce the oil to 1 tablespoon and this is a trim healthy mama fuel pull. You can eat this however you want, depending on the other things you add. To keep this a fuel pull, keep the chicken to 3-4 oz. Use lettuce or wonder wraps (I would season them with some Mexican style seasonings for more flavor), salsa, a little non-fat Greek yogurt, cilantro, green onions and other fp toppings. For an e, same as above, but you aren’t limited to your protein to 3-4 oz. You can add refried beans on the side with some baked tortilla chips.

My favorite way is as an s meal. This chicken taco recipe is also low carb and keto friendly as well. For a trim healthy mama s meal, I ate it in romaine lettuce leaves, cilantro, green onions, salsa, shredded cheddar, and avocado. It was perfect! My family ate theirs on regular tortillas with their favorite toppings and refried beans on the side. They loved it!

I pulled this out of the freezer one day when I hadn’t planned very well. I dumped the whole package, frozen, into my crockpot and cooked it on low all day long. By dinner time, it was cooked perfectly. If you are doing some meal prep for your week, dump all of this into a baggie or a container. Dump everything into your crockpot when you are ready to eat. If you have an instant pot, or other pressure cooker, I would cook for about 11 minutes on high pressure and only allow to release naturally for a couple minutes. Either way, they will turn out great.

For really quick and easy shredding of the taco meat, place the meat into a stand mixer. Start on slow and eventually you can speed up the mixer gradually. Don’t add the liquid. I have done that before and I ended up covered in the hot liquid. Dump the shredded meat back to the crockpot or instant pot and stir together. Serve your taco meat warm.

THM Crockpot Chicken Tacos


  • Crockpot


  • 2 Lb Boneless, skinless Chicken Breasts
  • 10 oz Can Diced Tomatoes with Green Chilies
  • 2 T Olive Oil
  • 1 Med Onion, diced
  • 2 t Minced Garlic
  • 2 t Chili Powder
  • 2 t Onion Powder
  • 1 t Ground Cumin
  • 1 t Salt


  • Dump everything, except the chicken breasts into a bag or container. Mix and then add the chicken breasts.
  • Freeze or store in the fridge. When ready to cook, dump the contents in a crockpot and cook on low for 6-8 hours.
  • When cooked it should like this.
  • Shred the chicken and mix into the liquid in the crockpot.
  • Eat with whatever fuel you want.
