Low Carb, Trim Healthy Mama S Lazy Lasagna

I have a delicious low carb, trim healthy mama s lasagna recipe on my site. It is absolutely delicious. When I take it to potlucks, I take no leftovers home. Everyone who tries it, loves it. I don’t always have time to make the wonder wraps, make the sauce, and everything else that goes into making lasagna from scratch. This recipe is a great replacement. I really don’t like cooked spinach. You should probably feel sorry for my hubby. He loves it but I never make it.

This lazy lasagna has spinach mixed all through it, but I still love it. I am trying to increase my green veggie intake and this recipe does exactly that. It tastes amazing and adds greens to your meal. I eat it with a big side salad, so I get two greens with my dinner.

I made this as part of my once a month cooking day. I prepped the meat mixture and froze it like that. Cooking day, I combined the very soft cream cheese, egg, and cheeses together. Then I added the thawed and squeezed chopped spinach. Then I mixed everything together. This is a quick dinner without prepping ahead. Making it part of my once a month cooking day, made this come together so fast on a busy day.

This recipe doesn’t photograph very well. It looks pretty gross in my photo, but it tastes so much better than it looks. Even if you aren’t on a low carb, keto, or trim healthy mama, this recipe is so good for your and so much better than regular lasagna. Give it a try this week, I think you will love it!!

Trim Healthy Mama Lazy Lasagna

Ingredients

  • 1 lb Ground Beef
  • 1 Med Onion, diced
  • 1 t Salt
  • 1/2 t Pepper
  • 1 T Minced Garlic
  • 1/2 T Italian Seasoning
  • 3/4 C Marinara Sauce
  • 10 oz Box Frozen Spinach, thawed and squeezed
  • 8 oz Box Cream Cheese, softened
  • 1 Med Egg
  • 1 C` Shredded Mozzarella, divided
  • 1/4 C Parmesan Cheese

Instructions

  • Brown ground beef with onion and minced garlic. Add salt and pepper and Italian seasoning.
  • Add marinara and stir to combine.
  • In a medium to large bowl, add softened cream cheese and egg. Mix to combine. This might take a couple minutes.
  • Mix into the cream cheese mixture, Parmesan cheese and 1/2 the mozzarella.
  • Add the thawed spinach to the bowl.
  • Stir to combine.
  • Add the ground beef mixture to the cheese mixture. Stir to combine.
  • Spray a casserole dish with non-stick spray. Scoop the ground beef, cheesy mixture to the prepared dish. Top with the remaining mozzarella cheese.
  • Bake at 350 degrees for 25-35 minutes, until hot and bubbly.
