Super Easy Summer Squash Saute, Trim Healthy Mama

It is squash season where I live. The zucchini that was used in this recipe, I went to my front yard and picked it. I am not growing yellow squash this year, so that was store-bought this time. I am always looking for new ways to eat squash. They are available year round and are cheap. This side dish is cheap and easy.

I haven’t been able to find a seasoning called Spike in a while. That is my favorite seasoning to add to many dishes, including squash. I used steak seasoning and salt and pepper. My hubby added creole to his. Add whatever you or your family likes.

Depending on how you are serving this, you can use more or less fat. I used about 1 tablespoon of olive oil in the whole recipe. You can use less if you need to. When I don’t want to keep adding fat to something like this, I add a little water. That always works and prevents the food from sticking and burning. If this served 4 people, then each person would have 1 teaspoon of fat. You could serve this with a chicken breast, oven roasted okra for a trim healthy mama fuel pull. Yum!

Sauteed Summer Squash, Zucchini and Yellow Squash

Ingredients

  • 1 Lrg Yellow Squash
  • 1 Lrg Zucchini
  • 1 Med Onion, diced
  • 1 t Minced garlic

Seasonings based on your family's likes

Instructions

  • Put onion in skillet with a little olive oil, cook over medium heat.
  • While onion is browning, dice up the squashes.
  • When the onion is slightly brown, add garlic.
  • Stir and cook over medium heat.
  • You can add a little more olive oil or add water as the squash continues to cook.
  • Serve hot with your choice of meat and side.
