Trim Healthy Mama S Big Mac Smash Tacos

I have seen these big mac smash tacos floating around and really wanted to make them trim healthy mama friendly. These turned out perfect! I love being able to  make foods that I see posted all over social media fit the trim healthy mama plan. They are also low carb!

Here are a few tips on how I made these.

I have found that low carb tortillas (the ones I used are pictured below) don’t always perform the same as regular flour tortillas. I spread the hamburger meat (I used 90/10) as thin as possible. My hamburger meat was 1.28 lb and I managed to get 8 tacos. I learned as I was cooking these to make sure to smash and get the grease out. Some of it was staying under the meat and causing the tortillas to get a little soggy.

If you have a griddle, you can make these even faster.

I used a large skillet and cooked 3 at a time. I cooked meat side down for at least 3 minutes, flipped over and cooked at least 2 minutes. And then I flipped again and smashed to make sure the tortillas weren’t soggy. I will show what they looked like in pictures below. The meat wasn’t raw at all, the tortilla wasn’t greasy either. This whole dinner can come together in less than 30 minutes, easily.

I would serve with something like green beans.

Green bean fries would be great. If you want carbs for your kids, throw some French fries in the oven when you start making the big mac tacos. I also used cheddar cheese instead of the standard American cheese. Use what you want. I did use shredded iceberg lettuce, but you can use whatever lettuce you want.  These got two thumbs up from the men in the house.

Ingredients

  • 1.25 Lb Hamburger Meat
  • 1/2 Medium Onion, diced
  • 8 Small Low Carb Tortillas
  • Salt and Pepper
  • 1/2 C Mayo
  • 2 T Dill Relish
  • 2 t Yellow Mustard
  • 1/2 t White Vinegar- I used rice wine vinegar because I forgot to buy white
  • 3/4 t Paprika
  • 1/2 t Garlic Powder
  • 1/2 t Onion Powder
  • 1/4 t Salt
  • 1-2 t Sweetener, I used powder swerve

Toppings: Cheese, Shredded Lettuce, Dill Relish or Pickles, and Sesame Seeds

    Instructions

    • Divide the hamburger meat between the tortillas evenly. Top the hamburger meat with salt and pepper. Then smash some diced onion on top. You will lose about half of them.
    • In a large skillet, or preferably a large griddle, place your prepared tortillas meat side down. I sprayed my pan but I didn't need to. Smash and cook.
    • While cooking, make the big mac sauce. Combine all of the sauce ingredients in small bowl, stir.
    • Continue to cook the smash burger/tacos. I flipped a few times, making sure the tortillas weren't soggy (you might not have to worry about that at all).
    • Once cooked, remove to a plate and top with the cheese.
    • Place the other tortillas meat side down and keep cooking.
    • Top with cheese with lettuce, onions, dill relish or pickles, sauce, and sesame seeds. If you have extra sauce, add some to each plate.
