Mexican Deviled Eggs- My twist on a classic!

If you like the flavors in Mexican food, you will love this twist on a classic. Mexican deviled eggs will be going with me to get-togethers. There are ways to make this so much easier. My first tip, use leftover meat. If you have a little leftover barbacoa, carnitas, chipotle chicken, or just leftover taco meat. I also found the fresh boiled eggs a lot easier to peel than my meal prepped eggs. Now my meal prepped eggs were duck eggs my friend gave me. They were much more difficult to peel.

These are a bit higher in protein too.

I couldn’t figure out what to use to blend the yolks with. I landed on sour cream. But I remembered how I have substituted blended cottage cheese as a sub in the past. I ended up using around 3/4 c- 1 cup but go slowly when adding, since you can’t remove it. Because of my daughter, I have to be careful with the heat. I used about 1 tablespoon of taco sauce. You can spice your mixture up if you want.

Here’s how we made this for 3 different taste buds.

I made up a little bento container with diced tomatoes, green onions, red onions, and cilantro. My daughter did diced tomatoes, green onions, and a little diced avocado. Hubby had cilantro, red onions, jalapeno, and green sauce. I had cilantro, onion, tomatoes, avocado and tajine! Oh, we all had a little Mexican cheese on top of the meat. They were perfect!!

Mexican Deviled Eggs

Ingredients

  • 10-12 Boiled Eggs
  • Meat of choice
  • 1/2 - 1 C Binding agent, I used blended cottage cheese
  • 1-2 T Taco Sauce, more if desired
  • Taco Seasoning to taste

Desired Toppings: Shredded cheese, onions, jalapenos, tomatoes, cilantro, avocado, guacamole, salsa, tajine, etc.

Instructions

  • Place your yolks in a bowl and mash. Add some taco seasoning and your binding agent. Mix, taste.
  • Add more seasonings, binding agent, and taco sauce. Mix well.
  • I placed the mixture in a baggie. I put everything in one corner, twisted the top so there was a little pressure building up and snipped a little off the end. And then squeezed some in each egg. The duck eggs were a lot bigger than the chicken eggs.
  • Top with meat, if desired.
  • If desired, make up some toppings.
  • Top as desired.
