Low Carb Crockpot Pork Carnitas

These pork carnitas are amazing!!! My family loved them but they ate them on regular tortillas. I ate mine on low carb tortillas but I bought romaine lettuce as well to add the pork to. Right now, I can’t find bib lettuce. Bibb lettuce is really one of the best ways to eat a clean and healthy pork carnita or other taco. If you can’t find any either, you can use the smaller leaves on the romaine lettuce.

I have a tip if you want to save money on the meat for the recipe. I went to the store looking for a 3.5 lb pork loin. I found one for for about $12. The large pork loins were on sale for 1.77 lb. I found one that was a little over $13. I came home, cut it in half and put one half in the freezer and one half in the crockpot.

Even though I fed 7 adults, we still had leftovers. If you have leftovers and don’t want to eat them right away, this will freeze wonderfully. This is a great meal that feeds a lot, tastes great, and is somewhat budget friendly. It is the perfect meal to start early in the day and let it cook on low until time to eat.

Top with whatever toppings your family wants. We had lettuce, cilantro, green onion, red onion, pickled jalapenos, and shredded cheese. Avocado would have been perfect, but I didn’t have any. This is such an easy recipe that you can have your kids dump everything in your crockpot in the morning. Call that home ec.

Low Carb Pork Carnitas

Servings 8 People

Equipment

  • Crockpot

Ingredients

  • 3.5 Lb Pork Loin
  • 3 T Pineapple Juice or Orange Juice
  • 1 Large Lime Juiced
  • 2 Medium Onions, diced
  • 2 Tbl Chili Powder
  • 2 tsp Ground Cumin
  • 2 Tbl Minced Garlic
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 Tbl Tomato Paste

Toppings: Lettuce, Diced Red Onion, Diced Green Onion, Shredded Cheese, Jalapenos, Diced Avocado, Chopped Cilantro,Sour Cream

Bibb Lettuce or Low Carb Tortillas

Instructions

  • Place pork loin in the crockpot and top with diced onions.
  • Mix the juices with the seasonings and the tomato paste. Pour on top of the pork loin.
  • Place the lid on top and cook on low for 8 hours.
  • After the meat has cooked, shred your meat. I used tongs and it shredded so easily.
  • Get your toppings ready.
  • Fill your preferred shell with the pork carnita mix and top with your desired toppings.
