Pollo Con Queso- Fantastic, Low Carb and Trim Healthy Mama S

This Pollo con Queso is amazing, low carb, trim healthy mama s and perfect for a busy night.

I cannot express to you how amazing this one dish meal is! It is so good that I have made it 2 times already and plan to make it many more times. If your family likes Mexican food at all, this must be on your menu. You only need one skillet to make it too!

This recipe really is super easy and delicious.

Both times I made this there were no leftovers. Everyone absolutely loved it. To keep is super simple for us, I served it over a bag of frozen (microwaved) cauliflower that I tossed some seasonings on. The pollo con queso can be served on top of Spanish cauliflower rice, a salad, in tortillas, on a base of sauteed peppers and onions (or nopaltios), or just with a fork.

Pollo con Queso means Chicken with Cheese

You can top it with whatever you want. We did pico de gallo and pickled jalapenos. Guacamole, sliced avocados, black olives, cilantro, salsa, diced tomatoes, and more. I used quesadilla cheese but you can use pepper jack, Monterey Jack, or just any cheese that you like. I just really like quesadilla cheese. I use it in my white queso.

Polllo Con Queso


  • 1 1/2 – 2 Lbs Boneless, Skinless Chicken Breasts or Thighs
  • 2 Tb Olive Oil or other fat You might need more
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 t Chili Powder
  • 1 t Ground Cumin
  • 1/2 t Salt Taste the final dish and see if you need more salt
  • 1/2 t Black Pepper
  • 1/2 t Mexican Oregano I found mine in the seasoning section with the Mexican ingredients
  • 4 oz Can of Green Chilies
  • 2 oz Cream Cheese I used reduced fat
  • 2 C Shredded Cheese Use any varity that your family likes
  • 1/2 C Heavy Cream You want it to be very queso like. You can start with 1/2 cup and add as more if you tghinks it needs more.


  • Dice up your chicken into smallish squarish chunks.
  • Add your oil to a large skillet (I used red palm oil) over medium heat.
  • Add your chicken to the skillet.
  • Add your seasonings to the chicken. Stir and cook.
  • Stir and cook.
  • When just about cooked through, remove from the skillet. Add your heavy to the skillet and green chilies.
  • Stir. Add your shredded cheese.
  • Stir and add the chicken back to the skillet.
  • Stir and taste. Add more seasonings that you think it might need.
  • If you are serving this over a base, place your base in a bowl.
  • Top with the chicken and cheese sauce and any other toppings desired.
