I don’t go to Italian restaurants very often anymore. Pre-thm I would go just about once a month. A local Italian restaurant had a delicious pink pasta sauce. They served it with ham and black olives in the sauce. I used Canadian Bacon! This sauce is amazing and absolutely takes the place of the restaurant pink sauce.

Let’s talk pasta.

Use whatever pasta your family will eat. My family really doesn’t care for spaghetti squash or veggie noodles or zoodles. One of my sons said that he can tell when I used Dreamfields pasta. They are mostly okay with the pasta made with lentils or the other pastas like those. Typically, I make one sauce and cook two different noodles. That’s what works for my family.

This is another super easy and fast skillet dinner.

Skillet meals are great for busy nights and hot days. These meals are perfect year-round. Busy lives, skillet dinners. 100 degrees outside, skillet dinner. Don’t feel like spending forever in the kitchen, skillet dinners. I am sure you get the point. We served this with a side salad, and we didn’t miss the bread! Pretty Amazing Pink Sauce

Ingredients

  • 6 oz Candaian Bacon, diced
  • 2 T Butter
  • 1 T Olive Oil
  • 1 M Onion, diced
  • 28 oz Crushed Tomatoes
  • 2 t Italian Seasoning
  • Few Shakes Red Pepper Flakes
  • 1 t Salt
  • 3/4 t Pepper
  • 1-2 t Sweetener, I used swerve
  • 1/2 C Ricotta Cheese
  • 3 oz Reduced Fat Cream Cheese
  • Optional, if you think it needs thinned out, a little water or broth

Toppings

  • Shredded Mozzarella
  • Dried Parsley
  • Red Pepper Flakes

Instructions

  • In a large skillet, over medium heat, add the butter and oil
  • Add the onion. Cook for a minute.
  • Add the Candian Bacon. Cook for a few minutes.
  • Add garlic. Cook for another minute.
  • Add the seasonings and cook another minute.
  • Add the crushed tomatoes and sweetener. Allow to simmer for at least 5 minutes. You most likely will need to turn the burner to low.
  • Add the ricotta and cream cheese. Stir until melted.
  • Taste the sauce. If you think it is too thick, add a little liquid.
  • Add pasta to the skillet or pour sauce over pasta. Top with toppings, if desired.
