Chia seeds are absolutely chock-full of amazing benefits. They are loaded with antioxidants, almost all of their carbs are fiber, contain many important bone nutrients, they are good for your brain, and more. These tiny little black and white seeds are so nutritious, and we can get them into our diet in a lot of different ways.
The health benefits of chia are amazing, but you should also make this becuse of the taste!
If you like pumpkin pie, you should try this chia seed pudding. It is so good. This is such a healthy way to get in the flavor of pumpkin pie in a very healthy way. Pumpkin is also really good for us. I feel like this is a treat, snack, dessert in supferfood form. You can only feel good about yourself when you eat this.
This recipe is so easy to make!
Just measure, mix, measure and mix. Pour into your containers and you are done. This recipe makes one 16 oz container or 2 8 oz containers. I made this two times to see if one way of mixing was better (and I had two recipes worth to put in my fridge). These would be great to add to your bag on the way out the door for a snack or to add to a meal later. This recipe is easier than my fuel pull pumpkin whip since there’s no blending! But both are great this time of year!!
Pumpkin Pie Chia Seed Pudding- Low Carb and THM S
Ingredients
- 2 T Chia Seeds
- 1/2 C Pumpkin Puree (not pumpkin pie filling)
- 3/4 C Unsweetened Almond milk (if you want it thinner, add an extra tablespoon or two)
- 1/2-1 t Vanilla
- 1/2 t Pumpkin Pie Spice
- Pinch Salt
- 2 T Sweetener- I used Powdered Swerve You might want it a little sweeter. If so go slow so you don't end up with too much
Instructions
- In small to medium size bowl, mix together everything but the milk. Pumpkin pie spice (maybe the cinnamon) doesn't mix well in liquid. So by mixing it with everything else first, it will mix in the pudding just fine.
- Add milk and carefully mix. You might want to add half of the milk at a time.
- Pour into containers of choice. Place in fridge at least 30 minutes. Stir before eating.
- I topped mine with a little whipped cream.
