Mexican Rice, Trim Healthy Mama E
It isnt a secret that I love Mexican food. My town has amazing Mexican food. My favorite place is a local place called Mariachis. I am not a huge bell pepper lover and my favorite dish has nopalitas in it instead. I eat it some sort of Mexican food a few times a week. Eating the trim healthy mama way can be tricky when having e meals but eating Mexican. No sour cream, no cheese, no avocados.
I came up with this recipe becuase I wanted Mexican and need a trim healthy mama e dinner. This is so good.I didnt add any cheese or sour cream to my bowl. I loved this dinner so much. My kids all loved it too. They did add cheese and sour cream. Those jalapenos on top really added to the meal. If you dont like them, just lave them off. I hope your family likes this as much as we did.
If you are making this and eating it right after, use a large skillet. I made mine early in the day, so I had to heat it back up. I put it in a baking dish and baked it in the oven. You dont have to do that though. Also, when I made my brown rice, I added some taco seasoning to the pot and about 1 tsp or so of olive oil.

Ingredients
- 3 C Cooked Brown Rice
- 1 lb Low Fat Hamburger Meat
- 1 Med Red Onion, diced
- 1 Med Bell Pepper, diced I used an orange one
- 1 Tbl Minced Garlic
- 2 Cans Diced Tomatoes with Green Chilies
- 1 Can Black Beans, rinsed
- 1 Can Pinto Beans, rinsed
- 1 Diy Taco Seasoning
- 4 oz Reduced fat Cream Cheese
- 1 tsp Salt
- 1/2 tsp Black Pepper
Toppings: Green Onions, Cilantro, Salsa, Jalapenos
Instructions
- Cook ground beef. Add onion, bell pepper, and garlic to skillet.
- After the meat is browned and the veggies are cooked, add canned tomatoes and beans. Add seasoning.
- Mix well and add the cream cheese. Stir until melted. Mix in the cooked brown rice.
- If making ahead, store in fridge. If eating right away, serve in bowls and top with desired toppings.
