Low carb chia see pudding, the perfect make ahead snack.

I am a firm believer of not making one thing at a time if I can help it. When I make chia see pudding I like to make at least two at a time. And then when a busy day comes, I can just grab it and have a healthy snack. Strawberries are on sale in my area right now, so I am finding all the ways I can to use them. They worked great in this chia seed pudding.

Ch-ch-chia! Let’s talk a little bit about chia seeds.

Chia seeds are so amazing for you. They have potassium, calcium, omega-3’s, iron, vitamin c, antioxidants, protein, and more. Here are some of the health benefits that have been reported from eating chia seeds: increase in energy, strengthens the immune system, aids in weight loss, helps normalize blood sugar, cleanses the colon, gets rid of toxins, joint pain, and more. I know that I am using these amazing seeds more often in my daily diet because of all of these amazing benefits.

There is something about fresh, sweet strawberries.

I love strawberry season. There are so many ways I use fresh strawberries. Even just with some fresh whipped cream, yum. Here are a few yummy recipes that use strawberries.

Low Carb Chocolate Strawberry Chia Seed Pudding, THM S

Ingredients

  • 1/4 C Chia Seeds
  • 2 T Cacoa Powder or Cocoa Powder
  • 2 t Vanilla extract
  • 1 C Sliced Strawberries
  • 1 C Milk of choice, I use unsweetened almond milk
  • 2 T Sugar Alternative, I used Monkfruit
  • 1 Pinch Salt

Instructions

  • Mix everything except your chia seeds and strawberries together.
  • Once everything is mixed together well, add your chia seeds.
  • Stir in your strawberries.
  • Divide mixture into two containers if wanting a snack, put into one container if you are wanting this to be a meal.
