Low Carb, THM S, Avocado Toast

This low carb, Trim Healthy Mama S, avocado toast is so good.

I needed an easy breakfast this morning. I happened to have a perfectly ripe avocado this morning. You know those rare occurrences when you happen to catch the avocado in it’s perfect ripe state. I knew I was going to eat it but I didn’t know how. I really wasn’t in the mood for eggs. After a few seconds I knew I wanted to use the avocado in a way that I really tasted it’s freshness.

I get keto bread at Aldi or Costco. I really like having a bread at home that I can add fats to and it doesn’t take me into a thm crossover. Having a sandwich with mayo and cheese and stay in low carb, thm s territory, it makes my day. This turned out better than I could have imagined. You don’t have to add the grape tomatoes or the everything but the bagel seasoning. I wanted just add something a little extra.

I used one light laughing cow cheese on top of the toasted keto bread.

You can use one triangle on each slice or even use cream cheese. I prefer the light laughing cow cheese because I am not a huge cream cheese fan. Fresh lemon juice could be used but I didn’t want to cut open a lemon for the small amount that was used in the recipe.

Low Carb, THM S, Avocado Toast

Ingredients

  • 2 Slices Keto bread, toasted
  • 1-2 Wedges Light laughing cow cheese
  • 1 Sm-Med Rope avocado
  • Splash Lemon juice
  • 2-3 Pinches Salt
  • 1-2 Shakes Black Pepper
  • 6 Grape tomatoes, halved
  • Shakes Everything but the bagel seasoning

Instructions

  • Spread light laughing cow cheese onto toasted bread.
  • Scoop out your avocado into a small bowl. Add salt, pepper, and lemon juice. Smash together.
  • Spread on top of toast.
  • Top with halved tomatoes and seasoning, if desired.
