If you want to change up your typical chili, here is the recipe for you. It’s easy and uses simple ingredients. I have one kid who isn’t a fan of chili (I don’t know why) but he liked this recipe. When it’s cold outside, having a simple and easy recipe on the stove or in the crockpot is satisfying. Knowing that we are filling hungry bellies with healthy food is almost priceless.

Simple ingredients but great taste.

This is sicu a simple recipe using simple ingredients. I basically took a basic chili recipe and gave it a Mexican flair. I don’t know why I didn’t come up with this recipe sooner. With how much we love Mexican food, this was a no-brainer. This is a budget friendly recipe as well. Budget friendly and delicious is a win in my book.

If you need something easy and warm on a cold day, this is the recipe you need.

We are about to be below freezing for over 48 hours (here in Texas that’s a bit abnormal) and this is something I plan on making. If you keep your pantry stocked, you can make this whenever you want. You could also make some baked tortilla chips to top the chili with. To keep it an e, non-fat Greek yogurt or a wedge of light laughing cow cheese is also a great option.  Or you can keep it simple with a little cilantro and jalapenos.

Ingredients

  • 2 Lb Ground Beef, lean or rinsed to keep it low fat
  • 1 M-L Onion, diced
  • 2 T Minced Garlic
  • 1 T Olive Oil
  • 1-2 M-L Jalapenos, deseeded, deveined, and diced
  • 12 oz Can Diced tomatoes with green chilies
  • 28 oz Can Crushed tomatoes
  • 4- 15 oz Cans of Beans, I used dark red kidney, pinto, red, and black
  • 32 oz Beef Broth
  • 2 Pckgs Taco Seasoning, I make my own
  • Any toppings you desire

Instructions

  • In a large skillet over medium heat, place olive oil and jalapenos. Cook for a few minutes.
  • Add garlic and seasonings.
  • Add beef and cook.
  • Rinse your beans.
  • Place everything in your crockpot (or keep cooking on the stove but you will need a bigger pot).
  • Cook on low for 3-6 hours or high for 2-3 hours.
  • Serve with desired toppings.
