I made a delicious and easy fuel pull nacho cheese sauce the other day. I knew there were more ways I could use cottage cheese (I am not a fan of the texture, it has to be blended). This fp- low carb, low calorie alfredo sauce is not only delicious, but also hubby approved. He loved it!! He couldn’t believe that is was a fuel pull alfredo sauce!
We made this into a complete fuel pull meal.
I used 1 serving of dreamfields pasta for each of us. Precooked chicken breast, the fp alfredo sauce, and some frozen chopped spinach. The spinach isn’t necessary, but I wanted to add a green to the recipe. You could add some broccoli and/or cauliflower if you want. Don’t overcomplicate it though, this recipe is so simple and fast!
A couple tips for the fuel pull Alfredo sauce
Cook your pasta first. You don’t want your pasta to be super hot. Hot but not directly combined with the sauce. I used the same pot for the pasta and the sauce. Don’t bring the sauce to a boil. Just heat it up. It’s possible that you could end up with the sauce separating. If you want your sauce to be thicker, use 1/2 cup of unsweetened almond milk and you can even add a tiny bit of xanthan gum. Use whatever on plan fp pasta if you want this to stay in fuel pull. If you don’t care about making it an e, use a veggie pasta.

Ingredients
- 1 C Low-fat Cottage Cheese
- 1/2 C Allmond Milk I used 3/4 a cup, 1/2 Cup should keep it thicker
- 1/3 C Parmesan Cheese I just used the kind in the container, not shredded
- 1/2 t Pepper
- 1/2 t Salt
- 1/2-1 t Garlic Powder
- 1/2 t Italian Seasoning
Optional: Meat, Veggie, Red Pepper Flakes, More Parmesan Cheese for topping
Instructions
- Cook pasta and drain.
- Add your sauce ingredients to a blender, I used a generic version of a bullet.
- Blend until smooth.
- I added 1/4 of a cup of additional unsweetened almond milk to get the rest of the sauce out of the blender cup. It didn't really do much.
- I had the chicken and spinach in my saucepan heating up. And then added the sauce. I cooked the sauce until it was warm/hot, but not boiling.
- Once heated, remove from heat.
- Pour over your pasta. Top with any toppings desired.
This is phenomenal – your recipe is great and so simple to make. We grew a ton of spaghetti squash this year and the sauce is absolutely perfect with it. Thanks so much, Jennifer.
