The Easiest Low Carb Broccoli Salad
This broccoli salad is so easy and delicious. I made this after a busy day and needed something quick to throw together. I made this and we had grilled shrimp. This is the perfect summer meal. You don’t heat up your kitchen, everything comes together super fast, and it’s family friendly. My whole family gobbled this up and there were no leftovers. There are so many broccoli salads out there. You will have to figure out which one is your favorite. I have started using precooked real bacon pieces in place of me cooking bacon and crumbling the pieces up. This saves time and money. That’s a winner in my book I am always looking for ways to get me out of the kitchen and save money.
I used sunflower seeds because they are cheap and I have a big bag. You can use other seeds/nuts, but I like the neutral taste of sunflower seeds. I used swerve confectioners sweetener as my sugar replacement in this recipe. Use what you have and prefer to use. We really like swerve in a lot of our recipes. None of my kids complained, some even went back for seconds. This is going to be a regular side this summer at my house.
Low Carb Broccoli Salad
Ingredients
- 2 Heads Broccoli, chopped into pieces
- 2.5 oz Bag Real Bacon Pieces
- 1/2 C Mayo
- 2 T Apple Cider Vinegar
- 1/2 C Non-fat Greek Yogurt
- 3/4 C Shredded Cheddar Cheese
- 3/4 C Diced Onion
- 1/2 C Sunflower Seeds
- 1-2 T Sweetener of Choice- I used 1 T Confectioners Swerve
- 1/2-1 tsp Salt, this will depend on the saltiness of your bacon
- 1/4 t Black Pepper
- 2 T Unsweetened Nut Milk
Instructions
- Put all ingredients except broccoli in a bowl.
- Stir until combined.
- Place chopped broccoli in a bowl.
- Add the mayo mixture to the broccoli and stir.
- Keep in the fridge until ready to serve.
