I am always on the hunt for trim healthy mama e dinners that my picky hubby and boys will eat. This easy chicken ramen noodle recipe was a hit. We all absolutely loved it. With the ramen noodle I get from Costco, this dish is ready in about 15-20 minutes. If you don’t have a Costco membership but still want to make a recipe similar, check the Asian section in your local grocery stores or you can use a veggie noodle.
I have seen a few different veggie flavors of spaghetti noodles.
It won’t be exactly the same, but that is what I would do if I wanted to make this recipe and couldn’t find on plan ramen noodles. As is typical, I didn’t really add much heat to the recipe, however, you can. A chili or other hot pepper would be nice, but not everyone can handle the heat. We topped ours with siracha to make it spicey.
Add more or less seasonings that your family will like.
Some people aren’t big fans of garlic or onion, etc., just use more of less of the flavors your family will like. My family absolutely loved this recipe as written. My kids also enjoy eating this with chopsticks. I usually get frustrated with chopsticks and end up using my fork. Top with green onion and siracha if desired. THM E Chicken Ramen
Ingredients
- 1 1/2 Lb Boneless, skinless Chicken Breasts
- 1/2 t Garlic Powder
- 1/2 t Onion Powder
- 1/2 t Ground Cumin
- 1/2 t Salt
- 1/2 t Smoked Paprika
- 1 T Oil
- 1 t Rice Vinegar
- 2 T Bragg's or Soy Sauce
- 1 T Brown Swerve
- 1-2 Shakes Cayenne, optional
- 1-2 Dashes Sesame Seed Oil
- 4-5 Ramen Noodle "pieces" I don't know what to call them but they are loose in the bag from Costco, one brick serves 2 but doesn't go over your carb limit, so we had one brick per person
Toppings as desired: Diced green onion, siracha, soy sauce, sesame seeds, etc.
Instructions
- Chop chicken into bite sized pieces. Coat with the seasonings, onion powder, garlic powder, cumin, smoked paprika, and salt.
- In a large skillet over medium low heat cook your chicken until pretty much cooked. While cooking the chicken, get a pot going to cook the ramen. Add a few shakes of salt.
- When chicken is pretty much done, add the vinegar, bragg's, and brown swerve.
- When noodles are finished, mine take about 3 minutes, add directly to the skillet.
- Toss to coat. Taste and see if it needs anything else, or let everyone add what ever extra they want to their bowls.
