Trim Healthy Mama E Chipotle Chicken Bowls

Today I took the leftover adobe chicken and made it into a trim healthy mama e meal. I cooked up some brown rice and seasoned it with Mexican seasonings. I added beans, cilantro, and green onions. I made the chipotle dressing into a trim healthy mama fuel pull by using just non-fat Greek yogurt and not adding the mayo. It was delcious!!

Add whatever your favorite Mexican inspired toppings you want. Add some salsa, jalapenos, diced tomatoes, etc. If you like things hot, add some heat. Squeeze your finished bowl with some lime juice. This is such a yummy trim healthy mama e meal. So easy and yummy.

Trim Healthy Mama E Chipotle Chicken Bowls


  • 1/2 C Cooked brown rice per person
  • 1/4 C Cooked beans per person
  • Chipotle chicken shredded
  • Fuel Pull Chipotle Sauce

Desired toppings: Cilantro, jalapenos, green onions, salsa, diced tomatoes, squeeze of lime juice, etc.


    • Put your brown rice in your bowl.
    • Add your beans on top of your rice.
    • Put chicken on top of your beans and rice and top with your toppings.
    • Put your chipotle sauce on top. Enjoy.
