This THM E, Sugar Free Oatmeal is amazing!!!

Strawberries are on sale right now and I am trying to find new recipes to use them in. This chocolate oatmeal recipe was born from that. I loved how it turned out. The chocolate topping is optional but, why not add it? I chopped 1/3 of an 85% dark chocolate bar and sprinkled on top. You could use chocolate chips if you want but watch your fat grams and make sure that you don’t add too much fat for a crossover.

I used fresh strawberries but you could chop up some frozen berries if you need to.

I can see eating this in the winter when fresh strawberries aren’t available and adding frozen ones instead. I also think cherries would be amazing as well. I think I will try that next. If you need a change up to your typical oatmeal, try this one. I don’t think you will be disappointed with this recipe. It is simple to make and doesn’t need special ingredients. I added a few special ingredients, but they don’t add to the flavor of the oatmeal, they just add to the nutritional part. For the sweetener I used 1 doonk (1/32 of a tsp) of pure stevia powder and 1 tablespoon of swerve. Use whatever sweetener you have, but taste it before you add too much sugar free sweetener.

Here are the somewhat special ingredients I added, but you don’t have to add them.

Honestly, these extra items aren’t necessary but I like to add as many things as possible to keep the nutrition up when I can. I added a pinch of sunflower lecithin. Since you only need a small amount, my bag has lasted over a year. A tablespoon of baobab powder. I try to make sure I get at least a tablespoon a day and adding it here was so easy. To up the protein I added 1 serving of collagen. And finally, 1/2 teaspoon of spirulina. In the picture above you can see that dark green powder. Once it’s stirred in, you can’t see it or tastes it. If you are curious about the health benefits of spirulina, I encourage you to do some research. It is so good for you. If you don’t have any of these ingredients, make it anyway, they don’t add to the flavor of the dish. Let me know what you think.

THM E Chocolate Covered Strawberry Oatmeal

Ingredients

  • 1 1/2 C Water, Almond Milk or Half water and half almond milk
  • 1/2 C Old Fashioned Oats
  • 1.2 C Chopped Strawberries
  • 1 Pinch Salt
  • 1 T Cacoa or Cocoa Powder
  • 1 Doonk Pure Stevia Powder
  • 1 T Swerve
  • 1 Splash Vanilla Extract
  • 1/3 85% Chocolate Bar I used one of the Aldi packages that has 5 bars in a 4.4 oz package.

Optional ingredients: Sunflower lecithin, baobab powder, collagen, spirulina

Instructions

  • Add liquid and oats to a medium sized pot. Allow to cook over medium-medium high until liquid is absorbed. Stir so the bottom doesn't burn.
  • While your oats are cooking, dice your strawberries.
  • When your oats are cooked add your sweetener, cacao powder and vanilla.
  • Stir and add your other ingredients, if adding.
  • Add your strawberries and stir.
  • Pour oatmeal to a bowl and top with chopped chocolate, if desired.
