Trim Healthy Mama E Creamy Taco Soup in the Crockpot

This recipe was one of desperation. We had just returned home from a weekend family trip and I was going to be gone the next day. I needed a crockpot recipe with ingredients I had in the house without going to the store. I came up with this family friendly, super easy recipe.

You can change out whatever ingredients you want. If you don’t want hominy, add a can of drained corn. Use your favorite beans. Dairy free, don’t add cream cheese, the soup tastes great without it. This recipe is so versatile, adjust for your tastes or your family’s tastes.

Ingredients

  • 2 lb Ground Turkey or lean ground meat
  • 1 Can of drained and rinsed Hominy
  • 1 Can of drained and rinsed Great Northern Beans
  • 1 Can Chili Style Beans
  • 1 can of Diced Tomatoes
  • 1 Can of Tomato Sauce
  • 1 t Salt
  • 1/2 t Ground Black Pepper
  • 1 t Onion Powder
  • 1 t Garlic Powder
  • 1 t Chili Powder
  • 1 t Ground Cumin
  • 1 T Dried Minced Onion
  • 1 Package 1/3 Less Fat Cream Cheese softened
  • Toppings:
  • Cilantro
  • Green Onions
  • Salsa
  • Diced Tomatoes

Instructions

  • Brown ground meat over medium to medium high heat. Add seasonings and 1 cup of water. When everything is mixed well add to crockpot base.
  • Add all ingredients except cream cheese and toppings. Add 4-6 cups of broth or water. I know some people like a soup that has more broth. Cook on low for 6-7 hours. Add cream cheese that has been cut into chunks. Stir every 10-15 minutes. If the cream cheese is room temperature it should be finished in an hour.
  • When cream cheese has melted serve in bowls. Top with desired toppings.

    How can this be an E meal with 8 ounces of cream cheese

      Use 1/3 less fat cream cheese, I think it is spelled neufatchel. This makes a lot so you aren’t getting a full 5 grams of fat in your bowl. I hope this helps.
