I have been meaning to try a trim healthy mama E fried rice recipe for a while now. I finally had the chance when I made this fuel pull Firecracker Chicken! This recipe couldn’t be easier. I would recommend making the brown rice ahead of time, if you can.

My whole family loved this recipe. I typically make my fried cauliflower rice to use in our Asian recipes. I was worried this recipe wouldn’t go over as well. Well, I was wrong. They loved it. Flavor it up however you want. Add more flavors, less, add some heat, etc.
I used one whole egg in the recipe and 2 egg whites equivalent to 2 eggs.
I wanted a little fat in the recipe but you can use all egg whites if you want. One egg yolk is 5 grams of fat. I also added a tiny bit of fat to cook the garlic, again that is optional. When I made this I only had a can of mixed vegetables. If you have peas and carrots, that would be a bit more traditional. If you make this, I would love to hear what you thought.
Trim Healthy Mama E Fried Rice
Ingredients
- 1 t Fat
- 1 T Minced Garlic
- 1 Whole Egg
- 2 Egg White equivalent to 2 eggs
- 14 oz Can of Veggies, drained You can use frozen or leave out
- Bragg's or Soy Sauce to Taste
- 4 C Cooked Brown Rice
Instructions
- In a large skillet, place fat and garlic. Simmer for about 2 minutes, do not let it burn.
- Beat egg and egg whites together. Spray skillet with a little non-stick spray that has the garlic in it. And add beaten eggs.
- Scramble the eggs. When scrambled remove from the skillet.
- Add the rice to the skillet and heat through.
- Add veggies if desired.
- Chop eggs and add to skillet.
- Add a little Brag's or soy sauce and taste. Top with desired toppings.
