This recipe is sure to become a family favorite. I would proudly take this to any potluck, get-together, or serve for a family Sunday dinner! Not only is this recipe that good, it is also so easy!! I have been trying to find a lot of super easy recipes that are also family friendly. This is one of those recipes.

If you like spinach artichoke dip, make this recipe!!

This cheesy spinach artichoke chicken casserole is basically the dip made into dinner. You no longer need a special reason to make the dip, just make this casserole. This recipe hits all of those flavors but you can have this on a random Wednesday. Easy, on plan, and delicious don’t have to be reserved for special occasions. But this dish is also perfect for special occasions! Just put it on your menu soon.

This recipe can easily be adapted to whatever noodles you and your family will eat.

I used a box of cooked penne Dremfields pasta. My biggest tip is to order your Dreamfields through the Walmart app. Amazon is way too much and Walmart’s cost is a lot better. Also, if you are sensitive to Dreamfields, use whatever pasta alternative that works for you. My family is able to handle the pasta and so we use it about 2 times a month. I also really like spaghetti squash (but my family doesn’t).

Cheesy Spinach Artichoke Chicken Casserole Low Carb and THM S

Ingredients

  • 1 1/2-2 Lb Boneless, Skinless Chicken cut into cubes
  • 16 oz Ricotta, I used reduced fat
  • 14 oz Can Artichoke Hearts, drained and chopped
  • 12 oz Frozen Chopped Spinach
  • 1 T MMinced Garlic
  • 1 t Salt
  • 1 t Onion Powder
  • 1/2 t Black Pepper
  • Few Shakes Red Pepper Flakes
  • 1 C Heavy Whipping Cream
  • 1 C Mozzarella
  • 1/2 C Parmesan Cheese
  • Choice of On Plan Pasta
  • Additional Cheese for Topping

Instructions

  • Add your chicken, artichoke hearts, spinach, garlic, and seasonings to your crockpot.
  • Stir and cook on low for 4-5 hours or high 2-3 hours (your crockpot might cook slower or faster).
  • When cooked, remove lid and stir.
  • Add the heavy cream and mozzarella and parmesan cheese. Stir. Add pasta of choice. Stir and allow to cook about 5 more minutes.
  • Top with cheese and serve with a salad or another green veg option.
  • We served ours with salad.
