Creamy Sausage, Broccoli, Cauliflower and Pasta Skillet

This creamy sausage, broccoli, cauliflower, and pasta skillet dinner is easy and perfect for busy days.

Easy dinner recipe that uses simple and basic ingredients. It is also low carb, trim healthy mama s. If you have a some sausage waiting to be used up in your fridge or freezer and a bag of frozen broccoli and cauliflower, this is the recipe to make. It comes together quickly and is a one skillet dinner (except for the pot to cook the pasta).

Let’s talk pasta.

Use whatever pasta you are comfortable eating. I used dreamfields in this recipe. Zoodles or spaghetti squash would also be amazing. My family isn’t a fan of either of those. I like them and have made spaghetti squash many times for me. Sometimes my life is busy and getting a good on plan meal is about all I can get on the table. If your family likes zoodles or spaghetti squash, or any other on plan, low carb alternative, use those instead.

I used a bag of frozen cauliflower and broccoli but you can use what you have in your freezer, or what your family likes.

If your family absolutely refuses to eat cauliflower (I have one of those but he liked it in this recipe), use all broccoli. Costco has some great frozen veggie medleys as well. The sausage is the star of the dish. It really adds so much flavor. Whatever veggies you choose, it will taste great. If you need a new easy weeknight dinner, try this one, it might become your family’s new favorite.

Creamy Sausage, Broccoli, Cauliflower, and Pasta Skillet

Ingredients

  • 1 T Olive Oil
  • 13.5 oz Sausage, I used Hillshire Farms but you can use whatever you have
  • 1 Med Onion, diced
  • 2 t Minced Garlic
  • 1/2 C Parmesan Cheese, I used shredded
  • 12 oz Bag of Broccoli and Cauliflower Mix
  • 1/4 C Heavy Cream
  • 4 oz Reduced Fat Cream Cheese
  • 1/4 C Broth
  • Salt and Pepper to taste

Instructions

  • Boil, bake, or make your pasta option that you are using
  • In a large skillet over medium heat, add your olive oil and onion. Cook for a few minutes. Add the minced garlic. Cook for another minute or two.
  • Slice your sausage into pieces. Add to the skillet. Cook for a few minutes.
  • Cook the frozen veggies in the microwave for the recommended amount of time. Add the cream cheese to the skillet Cook for a few minutes, stir to coat the sausage and onions.
  • Add the broth and heavy cream. Stir well.
  • Add the veggies to the skillet and stir.
  • Add the parmesan cheese and stir.
  • Add your pasta of choice. Stir.
  • Taste. Add seasonings if desired.
  • Serve warm with desired side.
