Crispy Chicken Legs

Sometimes we just need simple, cheap, and yummy. This low carb, trim healthy mama s chicken leg recipe is perfect for that. You can also substitute bone-in chicken thighs if you want. This simple recipe turns out great every time. When you want to stay on plan, on budget and eat great tasting food, this recipe is the one you should reach for. One tip that makes these crispy is making sure the legs are dry. Just wiping them down with paper towels is all you need to do.

I found a large package of chicken legs and thought they would be perfect to make for them. I made some with regular BBQ sauce and then these. A lot of them wanted my chicken legs over the BBQ ones. They ended up being a hit with them! This recipe is so simple. You just need the ingredients and a gallon baggie. I bake on parchment paper to make clean up super easy. I am all about simple, easy, and fast clean up!

I used butter in the recipe but you can use olive oil if you need it to be dairy free.

The ingredients are all basic pantry staples. If you wanted to add heat, shake in some cayenne pepper. When the legs are finished cooking, if they aren’t crispy enough, broil for a couple minutes. If you broil, don’t walk away and forget about the chicken legs, they will burn fast. You literally only need 2 minutes to finish the recipe. You want your legs to be at 180 degrees BUT you can remove them from the oven at around 165 to 175 degrees and let them rest. They will continue to cook for a little bit as they rest. Smaller chicken legs will be done sooner than any that are larger.

Low Carb Crispy Chicken Legs

Ingredients

  • 8 Chicken Legs
  • 1/3 C Butter, melted
  • 1 t Smoked Paprika
  • 3/4 t Salt
  • 1/4 t Pepper
  • 1/2 t Garlic Powder
  • 1/2 t Onion Powder
  • 1 t Dried Parsley

Instructions

  • Preheat your oven to 425 degrees. Line your baking sheet with parchment paper or foil.
  • Pat the chicken legs dry with paper towels. Pour your melted butter in a gallon baggie and add in your chicken legs. Squish to coat.
  • Place your chicken legs on the baking pan. Mix together your seasonings, except the parsley. Sprinkle about one half of the seasoning mix on one side of the legs. Bake for 25 minutes.
  • Remove from the oven and sprinkle the rest of the seasoning on the chicken legs. Bake for another 15-20 minutes.
  • If they aren't crispy enough, broil for about 2 minutes.
  • Remove from the oven and sprinkle with the parsley. Allow to rest for a few minutes before serving.
