Crockpot Chipotle Shredded Beef Tacos, Low Carb

This taco recipe was so easy!!

With only a few ingredients, a crockpot, you have amazing shredded beef tacos. This is a low carb, trim healthy mama s recipe, but it anyone who loves tacos will love this recipe!! It is that good!! You can remove what is left of the adobe peppers before shredding the beef. That will remove some of the heat, if you have someone who is sensitive to heat.

All of them are crockpot meals. I am loving this prep method. I take all of the ingredients that will go in a crockpot and place them in a plastic shoebox. I store them in a fridge. I know not everyone has room to do that but you can take the items that need to be refrigerated items and put them in one section in your fridge. This method is so incredibly easy and it makes dinner prep a breeze.

My hubby ate his a bit more traditional, with corn tortillas, cilantro, onion, and lime juice. That is a crossover with the carbs from the corn.

I ate mine with low carb tortillas, lettuce, cilantro, onion, shredded cheese, sour cream, and sliced tomatoes. Mine stayed low carb, thm s. You can make yours anyway you like them. You really can’t go wrong!! These are so easy and the taste is amazing! IF you have any leftovers, there are so many options. I am thinking either scrambled eggs with the leftover taco meat and all the taco toppings. Or a tomato sauce with eggs cooked in the sauce. Leftover taco meat and cilantro and onion on top! Yum!

Crockpot Low Carb, THM S, Chipotle Shredded Beef Tacos

Ingredients

  • 2-3 Lb Roast
  • 1 Med Onion, diced
  • 2 Chipotle adobe peppers with a little sauce
  • 1 T Garlic
  • 2 t Chili Powder
  • 1 t Ground Cumin
  • 2 t Salt
  • 1 t Black Pepper
  • 1 1/2 t Smoked Paprika
  • 10 oz Can, diced tomatoes and green chilis

Instructions

  • Dump everything in your crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  • If your roast had any fat easily removable, remove it. Shred your beef- you can use forks, tongs, or a mixer. Be careful because it's hot.
  • Serve with desired taco shells and toppings.
