This Trim Healthy Mama E soup recipe is amazing and delicious.

I made this during our rolling blackouts. I wanted some hot and filling. This soup was exactly what we needed. If you need a perfect soup for cold days, this is it. Finding filling e meals that my family loves is a bit harder than s meals. This one was a hit and my hubby went back for a large second bowl. In this hamburger veggie soup, use whatever veggies you have or want to use. I used the last of our on plan potatoes. I am so glad that I can have potatoes and not have to worry about it being a cheat. While a radish is a nice replacement, they aren’t exactly the same. You can use this soup to clean out your fridge of veggies that are about to go bad if you want. That’s basically what I did. I also used dried minced onion but you can use fresh if you want.

I used low fat hamburger meat for the meat in this soup.

If you don’t have low-fat hamburger meat, you can rinse it really well to remove the fat from the meat. You can use any low fat meat you want to use. Ground turkey would be good but I really wanted the flavor of hamburger meat in this soup. I feel that ground turkey is a great hamburger substitute but sometimes I really want the flavor of hamburger. This soup is one of those that remind me of an old fashioned, homemade soup your grandmother would make. You can make this thm e soup in your instant pot, crockpot, or a large pot on your stove. I made this in my crockpot on high. As soon as I had the soup in the crockpot base we lost power. As soon as our power came back on I put it on high. It took 2 of those cycles to get the soup fully cooked. I had intended to just let the soup cook all day, but the weather and power had different plans. Hopefully when you make this soup you aren’t experiencing a crazy weather, record breaking winter. It is a perfect healthy soup for cold days though.

Trim Healthy Mama E Hamburger Veggie Soup


  • 1 lb Lean Hamburger Meat
  • 1 T Minced Garlic
  • 1 T Worcestershire Sauce
  • 1 t Bragg's Liquid Aminos
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1/2 t Garlic Powder
  • 1/2 t Onion Powder
  • 2 t Smoked Paprika
  • 1 T Dried Minced Onion You can use 1 medium diced onion in place of the dried
  • 14.5 oz Diced Tomatoes
  • 15.5 oz Whole Kernel Corn, drained
  • 16 oz Tomato Sauce
  • 6-8 Waxy On Plan Potatoes, diced into bite size pieces
  • 15 oz Red Kidney Beans, drained and rinsed
  • 8 oz Cremini Mushrooms, cut into small chunks
  • 1 Med Yellow Squash, Cut into bite size pieces
  • 1 Med Zucchini, Cut into bite size pieces
  • 3-4 C Water or Beef Broth


  • Brown hamburger meat, rinse if needed.
  • Add garlic and seasoning. Cook for another minute or two.
  • Place meat and everything else into your pot. Stir to combine.
  • Cook until hot. In the crockpot, cook on high 3-4 hours, low 6-8 hours. Instant pot, manual high 12 minutes with a natural release for 6 minutes.
  • Serve hot. You can top with a few shakes of parmesan cheese. I ate mine with a wasa cracker.
