Low Carb Charcuterie Board Ideas

Charcuterie Boards are so simple but look so nice!

I love to put out a low carb, trim healthy mama s, charcuterie board during the holidays. They can look fancy but are so simple to assemble. These are great for people watching their carbs. Meat, cheese, pickles, olives, and more! Yum! Pictured above is dry salami, pickled okra, sharp cheddar, extra sharp white cheddar, Colby-jack cheese, fresh mozzarella with pesto, and an olive medley. These were all purchased at Aldi! Here are some other ideas.

Cheese, cheese, and more cheese!

There are so many cheese varieties out there. I love smoked gouda. I don’t buy it all the time because my kids eat it up so fast. If I want to save it for something special, I have to make sure I make an announcement. They love it that much. I try to buy a variety of cheeses. I LOVE sharp cheese but my hubby is more of a mild cheese guy. In November and December the stores are full of so many specialty cheeses.

Meat, all the meats

There are so many options for you to choose from. I like salami but you can buy a variety meat pack that has salami, prosciutto, and peperoni. Slice deli meat or summer sausage. You have so many options, especially during the holiday season.

All the other goodies to fill in the gaps

You can use a variety of pickles or pickled okra. We love olives in my house, so those are always on there. You can add nuts if you would like. Meat and cheese rollups would be a nice addition. Another idea is to take low carb tortillas and spread with cream cheese and top with sliced meat. Roll up and slice into circles. Parmesan cheese wisps would add a nice crunch. You could add some veggies directly on your board too. I like to make a separate veggie platter but if you need to fill in a gap, this would be a nice filler .A few low carb berries would be great and add a pop of color. Maybe some cooked shrimp with the tails attached for something a little different. You can use small bowls to keep small things contained or things that have a little liquid so that doesn’t spread to everything on the board. There are so many ideas out there for low carb charcuterie boards. You can customize them for the specific holiday and your family’s needs.
