Low Carb Cheesesteak Casserole

Another low carb, trim healthy mama s cheesesteak recipe. Here are two other versions that you might be interested in, my low carb phillycheesesteak skillet and my low carb philly cheesesteak in the crockpot. I am have been wanting to create some more casserole recipes and thought that a cheesesteak one sounded great. It didn’t photograph very well, but the taste was amazing.

This is a great recipe to make ahead. You can freeze the recipe if you want to do some freezer meal prep. Follow the recipe up to the point of baking. Store the meat and veggie mixture in a freezer baggie or desired container. You can also make this ahead during meal prep. You can follow the instructions above and store in the fridge or put into your baking container and store in the fridge. In the picture above I used pre-sliced provolone cheese. My suggestion is to use shredded cheese. We didn’t really like the way the sliced cheese worked out when we were eating it.

If your family isn’t all following a low carb or trim healthy mama way of eating, they can eat theirs on hoagie buns. Slice in half and toast. Spread some butter on it and scoop the chessesteak dish into the buns. One of my teens ate his like that and had seconds. This is a great dinner for busy nights, whether you make it the night you eat it or prep it ahead. IT is sure to become a family favorite.

Low Carb Cheesesteak Casserole

Ingredients

  • 2 lb Ground beef
  • 2 Bell Peppers, sliced into strips
  • 1 Lr Onion, sliced into strips
  • 1/2 C Broth or water
  • 4 oz Reduced fat Cream Cheese
  • 2 t Steak Seasoning
  • 1 T Minced Garlic
  • 1/2 t Salt
  • 1/4 t Black pepper
  • 1/2 t Smoked paprika
  • 1 t Worcestershire sauce

Instructions

  • Brown ground beef. Add seasonings and minced garlic. Stir to combine.
  • Add sliced bell peppers and garlic.
  • Stir and cook until peppers and onion are soft. Add cream cheese and broth.
  • Stir until melted. Pour everything into a 9×13 pan.
  • Top with cheese. Again, we suggest shredded and not sliced. Bake at 350 degrees for 10-15 minutes.
  • Serve hot with choice of side.
